🌾 Why Fiber Matters

Fiber is an important part of a healthy diet. Choosing high-fiber carbohydrate foods such as whole grains, fruits, vegetables, and legumes can provide sustainable energy while supporting digestive and heart health, including healthy cholesterol levels.

There are two main types of fiber, and both have important roles:

🥣 Soluble fiber dissolves in water and forms a gel-like substance. Good sources include oats, beans, lentils, apples, and citrus fruits.

🥦 Insoluble fiber does not dissolve in water and helps add bulk to stool and support regular bowel movements. Sources include whole wheat, brown rice, vegetables, nuts, and seeds..

The good news? You don’t have to choose one type of fiber over the other. Your body benefits from both soluble and insoluble fiber because they have different jobs.

Try including a variety of fruits, vegetables, whole grains, legumes, nuts, and seeds throughout your week to get a mix of both.

Our community has a story worth sharing.

This year, presenting at ADCES 2026 was especially meaningful as Dr. Sarah Ruiz celebrates 10 years as a Certified Diabetes Care and Education Specialist (CDCES) and Sun City Dietitians celebrates 7 years of serving our community. 💙

Over the years, the Sun City Dietitians team has worked to expand access to diabetes education and support throughout our region. We’re also incredibly proud to have encouraged and supported other healthcare professionals as they’ve grown their expertise and become CDCESs, helping strengthen diabetes care close to home.

Bringing some of the experiences and lessons from our community to the national stage at ADCES 2026 was a special full-circle moment.

We’re grateful for every patient, family, colleague, and community partner who has been part of our journey.

🍎 Helping Kids Make Healthy Choices in the School Cafeteria:

Many parents worry that school cafeteria meals are unhealthy, but today’s school meals are designed to provide balanced nutrition. Teaching children how to make healthy choices at school can help them build healthy habits that last.

Encourage your child to choose at least one fruit or vegetable each day, include a protein food to help them stay full and energized, and choose water to stay hydrated. Instead of focusing on “perfect eating,” help your child practice making balanced choices.

This week, talk with your child about choosing at least one fruit or vegetable with their school lunch each day. Small choices can make a big difference!

Learning doesn't end after graduation, it continues throughout life.📖

One of the greatest strengths of nutrition science is that it continues to grow. As new research emerges, dietitians have the opportunity to expand their knowledge and apply the latest evidence to better serve their patients and communities.

Following his experience at ASN 2026, Derick Martinez shared that his biggest takeaway was the importance of staying current with nutrition research and related topics so he can continue providing evidence-based care.

He also shared that one of his favorite parts of the conference was attending oral sessions that explored controversial nutrition topics. Hearing experts discuss where the current evidence stands reinforced how important it is to remain open to new research and continue learning throughout our careers.

Born and raised in El Paso with roots in Delicias, Chihuahua, Mexico, Cynthia is passionate about evidence-based nutrition and helping individuals and families build healthier lives through practical nutrition education.

Outside the office, you'll often find her belly dancing, exploring new places and cultures, trying new foods, or spending quality time with her son. She is currently working toward her Master's in Clinical Nutrition and is excited to continue growing both personally and professionally while serving our community.
