Healthy eating doesn’t have to mean changing the foods that connect us to culture and tradition.

Many Hispanic dishes are already built around nutritious ingredients like beans, vegetables, whole grains, herbs and spices. A few thoughtful choices can make favorite recipes even more supportive of your health without sacrificing the flavors that make them special.

See how tradition and healthy cooking can share the same table.

To help you create healthy and balanced meals, we spoke with two Colorado chefs about the significance of food in Hispanic culture and their recommendations for elevating flavors while also cooking healthy dishes.

For decades, Dr. Ross Camidge has dedicated his career to advancing lung cancer treatment, helping lead research, clinical trials and care for thousands of patients. In 2022, he unexpectedly found himself on the other side of that experience after being diagnosed with the same rare form of lung cancer he has spent years treating.

Over the past several years, Dr. Camidge has continued mentoring physicians, contributing to cancer research and learning from his own experience as a patient. Along the way, he says his diagnosis has given him an even deeper understanding of what his patients face and strengthened his commitment to improving cancer care for those who come after him.

Today, he's focusing on what matters most, time with his teenage daughters, supporting the next generation of oncologists and continuing to ask the questions that may help shape the future of lung cancer care.

After diagnosing and treating lung cancer for decades, he now faces advanced non-smoking lung cancer, deepening his empathy for patients.

There’s more to dried fruit than trail mix.

Learn to put those raisins, apricots and other pantry staples to work in unexpected ways, plus try a refreshing cold yogurt and cucumber soup.

One fine way to smuggle some of summer into fall and winter is to cook with dried fruit. Sunshine is packed into dried apricots, grapes (raisins), dates, currants, figs, plums (prunes) and any number of both red and dark berries, pineapple, apples, mang...

When Aazenet Marquez was diagnosed with colon cancer at 45, she was used to facing life’s challenges on her own. But through surgery, chemotherapy and a later diagnosis of metastatic liver cancer, she learned the importance of letting others support her.

In 2024, Aazenet attended a Nadie Lucha Sola event, where receiving a wig, a makeover and support from other women helped her through some of the difficult changes brought on by treatment. The experience meant so much that she returned as a volunteer to help other women facing cancer.

On Oct. 10, Nadie Lucha Sola will host a free event at UCHealth University of Colorado Hospital with wigs, community resources, interpreter services and opportunities to connect.

The event is open to any woman with cancer, regardless of where she receives care or the type of cancer she has. Preregistration is required.

Cancer support for women can ease the challenges of treatment. Learn how support networks and language services connect women with resources.

Three out of four Americans live in a community where animals carry rabies, a disease that is almost always fatal once symptoms appear.

The good news? Rabies is preventable when treatment happens quickly after an exposure.

Know which animals pose a risk, what counts as a possible exposure and what to do if you or a loved one may have been exposed.

This ancient disease has plagued humans for 4,000 years. Here's why rabies still poses risks to people and pets today.

When Amy Davis arrived at the emergency room in Estes Park after a car accident near Rocky Mountain National Park, she believed she was mostly unharmed. She had no broken bones and felt alert, even reassuring staff that she was okay. But within minutes, subtle symptoms began to emerge. Tingling in her leg quickly progressed to weakness on one side of her body, signaling something far more serious than crash related injuries.

Providers at UCHealth Estes Valley Medical Center recognized the warning signs and acted immediately. The team made the critical decision to transfer Amy by helicopter to UCHealth Medical Center of the Rockies. Stroke specialists were mobilized before she arrived. Imaging confirmed a rare trauma induced stroke caused by damage to her carotid artery, blocking blood flow to her brain. Amy was taken straight into an emergency thrombectomy to remove the clot and restore circulation.

The fast coordination between mountain caregivers, flight teams and stroke experts made the difference. After a short stay in inpatient rehabilitation, Amy returned home with no lasting neurological deficits. Months later, she returned to Colorado to thank the teams who saved her life, walking in under her own strength and with deep gratitude for care delivered when every second mattered.

Thanks to quick thinking by Estes Park nurses and doctors, Amy reached a nearby hospital quickly, where stroke experts provided vital care.

It's Colorado Gives Day and your gift can go twice as far!

Thanks to a generous $4500 match, every donation to the Estes Park Health Foundation Cancer Screening Fund will be doubled.

That means your $50 becomes $100.
Your $250 becomes $500.
Your impact becomes life changing.

Why Give Today?
Because your generosity made stories like this possible.

H. lost her health insurance after a small wage increase and feared the cost and unknowns of a mammogram. With a complicated family history of cancer, she knew she needed a screening.

She received a voucher funded by donors through our Cancer Screening Fund.

That evening, she received her results: all clear.

She calls it 'the gift of no worry'.

Today, you can give that gift to someone else.

Donate to the Cancer Screening Fund today.
