I have so many wonderful memories of going to the local market and buying fresh seasonal vegetables two or three times a week. ❀️

Today, I want to show you my vegetable haul! πŸ₯•πŸ₯¦πŸŒΆοΈ

Here's what I picked up:

Kantorla, Alu Leaves, Cauliflower, Pablano pepper, green onions, green bananas, Calabaza squash, Chayote Squash, Green and Red Cabbage, Capsicum, Cilantro, min, green limes, sweet potatoes, brinjals and tomatoes.

I love bringing variety of vegetables into my meals, and Ayurveda encourages us to adapt our food choices to the seasons.

Fall is coming and one root vegetable you can find everywhere this season is sweet potato! πŸ‚

So I decided to turn it into sweet potato parathas!

I boiled and mashed the sweet potatoes, added whole-wheat flour, made a dough, rolled out the parathas and roasted them with a little ghee.

And they turned out AMAZING! πŸ˜‹

Sweet potatoes are a great source of fiber, potassium and beta-carotene.

Ayurveda encourages us to incorporate seasonal foods into our diet, and this is one delicious way to do it!

🍁 What's your favorite fall fruit or vegetable?

Tell me in the comments and tell me how you use it!

🌿 DAY 7/30

Hey there! Gauri from Ayurnutrition, where we optimize health and wellness by integrating Ayurveda with Integrative & Functional Nutrition.

Today, I made ghee the traditional way! 🧈

I started with whole-fat cream, added yogurt and let it ferment for two days until it became curds.

Then I churned it to get delicious butter and buttermilk.

Finally, I slowly cooked the butter over a low flame to make beautiful, aromatic ghee.

The fermentation step introduces live cultures into the butter and buttermilk..

And from an Ayurvedic perspective, ghee is considered Agneya, traditionally associated with supporting Agni (digestive capacity)

And let me tell you the taste is AMAZING! πŸ˜‹

Have you ever made ghee this way? Tell me in the comments!
