Type 2 diabetes is, in part, the result of chronic inflammation, so individuals with diabetes should look to the source and aim to ease the inflammation. Researchers believe that olive oil has potent anti-inflammatory effects due to oleocanthal, a compound that works like ibuprofen. Olive oil has been beneficial in reducing C-reactive protein, which is an inflammatory marker. Further, it may even have the potential to hinder genes that exacerbate inflammation.
