What is horchata?
Broken down to its basic elements, authentic horchata is essentially sweetened rice and almond milk that’s flavored with a little cinnamon. It’s cold, creamy, and shockingly refreshing for something that looks so much like a glass of milk.

Ingredients
2 cups boiling water
1 ½ cups long-grain white rice
½ cup whole blanched almonds
3 cinnamon sticks
2 cups cold water
1 cup light coconut milk
⅓ cup honey
½ teaspoon vanilla extract
1 pinch kosher salt
Ground cinnamon for topping

Instructions
Combine the boiling water, rice, almonds, and cinnamon sticks in a heat-proof container. Let cool, then cover and refrigerate overnight.
Discard the cinnamon sticks and transfer the rice and almond mixture to a blender. Add 2 cups cold water. Cover and blend on high got 3-4 minutes, or until very smooth. Pour the mixture through a fine mesh strainer into a pitcher.
Heat the coconut milk and honey in a saucepan set over medium heat until the honey dissolves. Let cool, then pour into the pitcher with the rice mixture. Stir in the vanilla and salt.
Refrigerate until ready to serve. Serve over ice and top with ground cinnamon.

You can never go wrong with sloppy Joes, especially when the recipe requires just one pot to whip up! In the slow cooker, the ground beef becomes so juicy, and the sweet-tangy sauce tastes even more irresistible.

Ingredients

2 Tbsp. salted butter, plus more for the rolls
2 1/2 lb. ground beef
5 garlic cloves, minced
1 large green bell pepper, diced
1/2 large onion, diced
1 tsp. kosher salt
1/2 tsp. black pepper
1 1/2 cups ketchup
2 Tbsp. brown sugar
1 Tbsp. Worcestershire sauce
2 tsp. chili powder, plus more to taste
1 tsp. dry mustard
1/2 tsp. crushed red pepper flakes, plus more to taste
8 kaiser rolls, split
8 slices cheese (such as cheddar, American, pepper jack; optional)
Hot sauce, for serving
Kettle cooked potato chips, for serving
8 dill pickle spears, for serving

Directions
1. In a large skillet, melt the butter over medium-high heat. Add the ground beef and cook, breaking up the meat with a wooden spoon, until browned, 5 to 7 minutes. Drain off and discard most of the fat.
2. Add the garlic, bell pepper, onion, salt, and black pepper and cook, stirring occasionally, until the vegetables begin to soften, 5 to 7 minutes. Pour the mixture into a 6-quart slow cooker.
3. Add the ketchup, brown sugar, Worcestershire sauce, chili powder, dry mustard, red pepper flakes, and ½ cup water. Stir to combine.
4. Cook until the flavors concentrate and the mixture reduces slightly and deepens in color around the edges, on high for 2 hours or low for 4 hours. Taste and adjust the seasonings as needed.
5. Heat a griddle or skillet over medium heat. Spread the cut sides of the rolls with butter and, working in batches as necessary, toast buttered-side down until golden brown, 1 to 2 minutes. Spoon the meat mixture (about ½ cup) over each roll, topping with slices of cheese, if you like. Serve with hot sauce, chips, and a pickle.

Strawberry and pineapple are a fruit combo that’s not paired together quite often enough and I love the balance of flavors in this refreshing . A splash of lime juice enhances the flavors and brights it up just a bit while the agave nectar adds just the perfect amount of sweetness.

Ingredients
4 cups fresh pineapple chunks
1 1/2 cup fresh strawberries
2 1/2 cup water
2 tablespoons agave nectar
juice of 1 lime (about 2–3 tablespoons)

Instructions
Add pineapple, strawberries, 1 cup of water, agave nectar, and lime juice to a blender.
Blend until pureed and there are no more chunks left.
Pour juice through a strainer into a pitcher. (you may need to use a spoon or spatula to help it through)
Add the remaining 1 1/2 cups of water to the pitcher. Stir to mix and serve!
