Never underestimate the Vagus Nerves!

Your vagus nerves play a major role in regulating stress, inflammation, energy, and overall health. These nerves connect the brain to major organs and help balance the body’s “fight or flight” and “rest and recover” systems.

When vagus nerve function is strong, the body handles stress better and supports calmness, focus, and healing. Poor vagus nerve function (“low vagal tone”) has been linked to chronic inflammation, stress overload, and increased risk of illness.

Sardines!!! Those of us who live in SW FL love to order smoked fish dip as an appetizer at our favorite fish restaurants. We have been reading about using sardines in this fish dip and had to try it – and it did not disappoint! Sardines are loaded with essential fatty acids and are so good for you. Give this recipe a try! We made it and it was gone almost immediately!

What you need:

1 can sardines in olive oil (lightly drained)
2–3 tbsp cream cheese or Greek yogurt
1 Tbsp Dijon mustard
Juice from one fresh lemon juice + zest
1 tsp honey (adjust to taste)
1 Tbsp finely chopped shallot
1 Tbsp capers (optional)
2 Tbsp fresh herbs (parsley, dill, cilantro – whatever your favorites are)
Salt & black pepper to taste
Optional: Capital Hill seasoning that contains dill, shallots, onion, salt, and more)
What to do:

Mash sardines with a fork until mostly smooth. Mix in cream cheese (or yogurt), mustard, lemon juice, zest, and honey until creamy. Fold in shallot, capers, and fresh herbs. Season with salt and black pepper. Taste and adjust lemon or honey as desired. Chill 15–30 minutes before serving.

Other Tips

Add more lemon for a brighter, fresher taste
Add more honey to soften and balance saltiness
Use both parsley and dill for best herb flavor
Chilling enhances flavor and texture
Blend instead of mash for a smoother, more spreadable consistency
Serve slightly chilled or at room temperature for best flavor

We frequently try out “healthier” dessert recipes, and this is one of them. Give it a try! Especially if you are trying to limit carbs/sugar.

What you need:

1 cup unsweetened coconut flakes
½ cup nut butter (almond, peanut, or cashew)
¼ cup chocolate chips (use high % cocoa chips like 85% or more)
2–3 Tbsp coconut oil (melted)
1–2 Tbsp low-carb sweetener (optional – like Allulose), we didn’t use any
1 tsp vanilla extract
Pinch of sea salt
What to do:

In a bowl, combine coconut flakes and nut butter. Stir in coconut oil, vanilla, sweetener, and salt. Fold in chocolate chips and mix gently so they stay intact. Scoop and roll into small balls (or press into a lined dish for bars – we like the bars – less work!). Chill/refrigerate 20–30 minutes until firm.

Variations:

Stricter keto: skip sweetener, use darker chocolate (85–90%)

Higher protein: add 1–2 Tbsp collagen peptides or scoop of protein powder (we like pea protein)

Crunch factor: add chopped pecans or walnuts

Dessert feel: drizzle melted chocolate on top before chilling
