My name is Nathalie Rhone, RD and I started All Good Eats to share my passion for nutrition, wellness, and the desire for people to enjoy their delicious food and their healthy bodies. My philosophy follows a clean-eating lifestyle, packed with organic, whole foods full of big flavor. It's a ton of fun to post pictures of yummy food, but it took quite a bit of work to get to this point, where I can guide you based on a combination of real science and great taste. I am a Registered Dietitian receiving a Masters of Science in Clinical Nutrition from New York University and I have a BA in Psychology from Cornell University. In addition to one-on-one consulting, I've worked at Weill Cornell Medical College, New York Presbyterian Hospital and NYU Langone Medical Center. Simple Kale Salad 🌱

Serves 1Ā 
Ingredients:
• ½ head of kale, finely chopped
• ¼ cup of walnuts chopped
• ¼ cup of pumpkin seeds chopped
• ¼ cup of dried cranberries
• ¼ cup of blue cheese
• ½ lemonĀ 
• 1 tablespoon olive oil
• Salt and pepper to taste

Directions:Ā 
1. To a bowl, add your chopped kale and massage for 5 minutes with olive oil.
2. Let kale rest for 20 minutes.
3. After 20 minutes have passed, add your walnuts, pumpkin seeds, cranberries, and blue cheese.
4. Juice ½ lemon on top and season with salt and pepper to taste. Add any additional desired dressing. Enjoy!

Matcha frozen yogurt bark šŸ˜‹

Ingredients:
-1.5 tbsp matcha powder
-2 tbsp raw honey
-2.5 cups of plain Greek yogurt (can substitute for dairy free yogurt)
-toppings: chocolate chips, pecans, goji berries, blueberries

Directions:
1. Mix ingredients into a bowl and stir together until smooth and creamy consistency.
2. Pour onto a baking sheet and add toppings.
3. Leave in freezer for 3 hours.
4. Cut into squares and enjoy!

Breakfast time šŸ˜‹

Morning Glory Muffins —

For the wet ingredients:
1 medium zucchini

1 cup shredded carrot

1 ripe mashed banana

½ cup pure maple syrup

2 eggs

1/3 cup coconut oil, melted and cooled

1 teaspoon vanilla extract

For the dry ingredients:
1/2 cup oat flour

1/2 cup tapioca flour

3/4 cup almond flour

1/2 cup shredded unsweetened coconut (not the large flakes)

1 teaspoon baking soda

1 teaspoon cinnamon

¼ teaspoon nutmeg

¼ teaspoon salt

For the mix-ins:
ā…“ cup chopped walnuts

ā…“ cup raisins

Directions:
Preheat the oven to 350 Degrees F.

In a muffin tin, add greased muffin liners.

Shred and measure out zucchini, then place in a cheese cloth and squeeze out the excess moisture.

In a large bowl, mix together the wet ingredients, and in a separate bowl whisk together the dry ingredients.

Add the dry ingredients to the wet ingredients and mix until combined.

Fold in the chopped walnuts and raisins.

Divide the batter evenly amongst the muffin liners and bake for around 25 minutes (or until a knife comes out clean when you place it through the center of the muffin).

Chocolate Mousse Yogurt šŸ«

Serves: 6

Ingredients:
-2 cups of Greek yogurt (or yogurt of choice)
-1 cup milk of choice
-3/4 cup chocolate chips
-2 tbsp maple syrup

Directions:
1. Place milk in a saucepan on medium heat. Add the chocolate chips and heat the milk until the chocolate melts.
2. Pour the chocolate and milk on top of the yogurt in a separate bowl.
3. Add in the maple syrup and stir until properly mixed together.
4. Leave in fridge for at least 2 hours or until thick.
5. Serve with berries or whipped cream and enjoy!

Veggie, Hummus & Feta Bowl —

Ingredients:
1/2 cup cherry tomatoes
1/2 cup broccoli
1/2 cup spinach
1/2 cup arugula
1/2 cup quinoa
1 cup of chicken or vegetable broth
1/4 cup hummus
1/4 cup feta cheese
Olive oil
Lemon juice

Directions:
1. Preheat oven to 425 degrees F.
2. Cut cherry tomatoes and broccoli and place on baking sheet. Drizzle with olive oil and place in oven for 15-20 minutes.
3. Place the broth in a pot on the stove and add the quinoa. Let cook for 20 minutes on medium/low heat until fully cooked.
4. Tear up spinach and place in bowl. Top the spinach with the roasted cherry tomatoes, roasted broccoli, arugula, and cooked quinoa. Add hummus and feta cheese on top.
5. Drizzle with olive oil and lemon juice, or add dressing of choice. Enjoy!

Are you dealing with picky eaters, toddlers who won’t try new foods, or kids who are generally uninterested in eating? ā˜šŸ» major tip for you: get them involved in the cooking process! Research shows that kids who are involved in the cooking process are more inclined to be adventurous eaters. Here are some ideas to get you started:

• Give small, specific tasks in the kitchen like pouring, mixing, measuring - simple and easy. Not only does it get kids excited about the food they are preparing, but it is great for developing fine-motor and cognitive skills.

• Get them in the garden. Time in the garden is amazing for children to learn where their food comes from and instills in them an appreciation for what they are eating. It sparks interest and willingness to try different foods - making for more adventurous eaters. Same idea with going to the grocery store and getting them to help choose fresh fruits and veggies from the produce section.

• Let them be part of the discussion for what’s on the menu! Give choices. Look through cookbooks and recipes together.
