✨whole (noun): all of something

If you’ve been following Young, Whole, and Hungry since the beginning or since the early days, you know that this account has evolved into something that is so different than intended. What was once a blog that focused on eating whole food and nutrition is now a multi-faceted space where I can openly share my life and the things that I love.

For a while I’ve felt like I have to keep all the parts of my identity separated or just leave things out so that people who are just here for the food wouldn’t be bothered with the other things - motherhood, fashion, home, etc. But what I have realized, and what you all have repeatedly told me when I ask, is that most of you like all of the parts that I share, whether it’s about food, motherhood, marriage, fashion, finances, or just life in general.

So I’ve decided to redefine Young, Whole, and Hungry to reflect just that, the whole picture. All of me. From now, expect to see the whole picture, including but not limited to:

-Motherhood
-Jack
-Marriage
-Food and food freedom (no diets here)
-Body neutrality
-Finances
-Home decor/DIY/Reno
-Products I’m loving
-Fashion
-Cleaning
-Justin’s accents

When things happen in the world that seem unfair and unjust, a small voice inside my head asks, “how could you bring a child into a world as crazy as this?”

But when I look at Jack, that voice quickly vanishes because I know he, along with all the other sweet babies in the world, will be the change for a greater good.

As we continue to teach Jack how to love and accept everyone and how to make his own decisions, he is learning how to make the world a better place.

I can’t complain because while I waited for my Wi-Fi to reboot, I made this super simple scramble with some frozen hashbrowns, cherry tomatoes, kale, and eggies! It was super quick to make (under 5 min) and obviously it was delish.

-SIMPLE CREAMY DIJON CHICKEN-

You know like when a recipe is like 108 ingredients long time and you only add a teaspoon or a super small amount to the dish? Do you ever wonder if that little ingredient actually makes a difference in the taste? Sometimes it does but sometimes does it?

Tonight I made a dish that could have a lot of ingredients in it but I only used 8 ingredients, including salt and pepper, and it was delicious!

Heres how I made this creamy dijon chicken:

Put EVOO In a cast-iron and sprinkle salt, pepper, and herbs de Provence if you have it. Put your chicken thighs in skin side down and cook for 5 to 8 minutes on medium high heat until crispy. Remove chicken from skillet and turn on low. Add garlic, chicken broth, and Dijon mustard and stir until combined. Once it’s cooled off a little add cream, about a quarter cup. Add the chicken back in and put in the oven for 30 to 40 minutes at 375°. And boom! Dinner is served!
