Lemon Garlic Chicken Zucchini

1 1/2 lbs boneless chicken breasts cut into 1” pieces*
Himalayan sea salt and freshly ground black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
3 teaspoons Italian seasoning **divided 2+1
3 tablespoons butter or olive oil divided
4 cloves garlic minced
4 medium zucchini cut in half lengthwise and sliced crosswise 1/2”
Zest of one medium lemon
Juice of one medium lemon

1. Season the chicken generously with the salt and pepper, then the onion and garlic powder and 2 teaspoons of the Italian seasoning blend.

2. Heat a large skillet over medium high heat and add 2 tablespoons of the butter or oil. Once sizzling hot, add the chicken in a single layer and allow one side to brown, then stir and continue to cook, stirring occasionally for another minute or two or until cooked through, then transfer to a plate.

3. Lower the heat to medium and add the remaining tablespoon of butter, then add the zucchini. Season lightly with salt and pepper and the remaining teaspoon of Italian seasoning blend. Cook until barely softened, then add the garlic and cook another 30 seconds. Add the chicken back to the skillet followed by the lemon zest and juice. Stir and cook to heat through, then remove from heat.

4. Serve alone or over zucchini noodles, or cauliflower rice to keep it low carb. Enjoy!

Garlic and Herb Mashed Cauliflower

1 large head of cauliflower or 2 smaller ones, 2 1/2-3 lbs, cut into florets
3 cloves garlic minced
4 tablespoons grass fed butter, divided�
1 tablespoon unsweetened on plan milk of choice
1 teaspoon Himalayan sea salt
1/4 teaspoon black pepper
2 teaspoons fresh herbs minced (I used 1 teaspoon rosemary and 1 teaspoon thyme)
Additional fresh herbs for garnish
1 tablespoon melted butter for garnish

1. First, steam the cauliflower. My method: bring a couple of inches of water to a boil in a stockpot, and place the florets in a steamer basket set in the pot. Cover the florets and steam for about 8-10 minutes or until very soft. Drain the cauliflower in paper towels to remove excess water. See notes for a microwave option.

2. While the cauliflower cooks, heat one tablespoon of the butter in a small skillet over medium heat. Add the minced garlic and sauté just until softened - about 30 seconds - then remove from heat and set aside.

3. To mash the cauliflower, you can use a food processor OR an immersion stick blender. Add the sautéed garlic, milk, salt and pepper to the cauliflower and blend until the mixture resembles mashed potatoes. You can puree them creamier if you prefer in your food processor, but I like them with some texture. Once mashed to your preference, stir in the minced herbs.

4. Transfer to a serving bowl and garnish with more fresh herbs and a drizzle of melted butter. Serve and enjoy!

Grilled Salmon with Garlic Compound Butter

3 salmon fillets
3 teaspoons dijon mustard
6 tablespoons butter, softened
4 cloves of garlic, finely minced
1/3 cup mixed herbs, chopped (I used chives, parsley, and thyme)
1/3 cup slivered almonds

1. A few hours before you’re going to cook your salmon, combine the softened butter, garlic, and herbs together and stir

2. Place the butter onto a sheet of saran wrap, wrap up in saran wrap, and form into a thick log. Let sit in the fridge for a few hours to firm up

3. When ready to cook, brush 1/2 teaspoon of dijon onto each side of each salmon fillet and season with salt and pepper

4. Brush your grill grates well with oil, and grill over medium high heat until the salmon is charred on both sides and just cooked through (when it flakes easily with a fork)

5. Meanwhile, toast your almonds over medium heat until fragrant and lightly golden

6. To assemble, slice pats of compound butter and place over hot salmon and sprinkle with 1/3 of your toasted almonds

Garlic Butter Salmon and Veggies

2 tablespoons olive oil divided
1 1/2 teaspoons Himalayan sea salt divided
1/2 teaspoon freshly ground black pepper divided
4 salmon fillets skin on or off
3 tablespoons minced garlic divided
3 tablespoons fresh chopped parsley divided
2 lemons juiced (about 6 tablespoons)
1/2 cup grass fed butter, melted
12 oz brussels sprouts halved
1 lemon sliced, for garnish

1. Preheat your oven to 425°F. On a large baking sheet, add the brussels sprouts, drizzle with the oil, season with sea salt and black pepper and return to the oven for 5 additional minutes.

2. Lower the heat to 400°F. Remove the pan from the oven and arrange the salmon with brussels sprouts. Sprinkle the salmon with 2 tablespoons of the garlic and 2 tablespoons of parsley.

3. Combine 3 tablespoons of lemon juice and 1/4 cup of the melted butter and pour the mixture over the salmon and drizzle some over the brussels sprouts. Season the salmon well with sea salt and black pepper all over.

4. Return the pan to the oven and bake until the salmon is opaque throughout, (about 10-12 minutes).

5. Meanwhile, in a small bowl, combine the remaining butter, garlic, parsley and lemon juice. Serve with the salmon, brussels sprouts, as a dip or sauce. Garnish with lemon slices and additional parsley, if desired.

One whole year with Dr. Shuttleworth! 🥳💙

It’s hard to believe it’s already been a year since Dr. Shuttleworth merged his office with ours! We’re so thankful for the decision that brought him, Emily, and the rest of their patients into the Jernigan Chiropractic family.

Easy Green Breakfast Bowls

2 tablespoons olive oil
3 cups kale chopped
2 cups shredded Brussels sprouts
2 cups cauliflower rice frozen or fresh
1 avocado
Thinly sliced green onions or fresh chives
Fresh lemon or lime juice
Himalayan sea salt and freshly ground black pepper plus other favorite seasonings
2 eggs
Butter or olive oil to cook the eggs

1. Have your greens prepped and ready to go. Heat a large skillet with 2 tablespoons of butter or olive oil. Once heated, add the shredded Brussels sprouts and cook about 30 seconds, then add the kale and sprinkle with a tablespoon of water. Stir to cook down, then season with sea salt, black pepper, and any other seasonings you like. Remove from the skillet to two bowls and cover to keep warm.

2. Add the cauliflower rice to the same skillet (you can add a bit more oil or butter if needed) and season with salt, pepper, and a squeeze of lime juice. Depending on whether your rice is frozen or fresh, you might need to cook anywhere between 1-5 minutes to soften it to preference.

3. Once done, arrange around the greens in both bowls.

4. For the eggs, I like to cook them sunny side up for this recipe so the yolks run into the veggies like a sauce or dressing. You can cook the eggs anyway you like. For my method, heat a nonstick skillet to medium low heat and add about a tablespoon of butter or oil. Carefully crack each egg either directly into the skillet or first into a ramekin, then cover with a clear lid (so you can see the cooking progress) and cook until the white are done and yolks runny - about 1.5 - 2 minutes.

5. Peel and thinly slice your avocado and arrange over the greens and rice, top with the cooked eggs, and sprinkle all over with green onions. Enjoy right away!
