🍋 The little green that tastes like lemon!

If you’ve never tried sorrel microgreens, you’re in for a surprise. These tiny leaves pack a bright, tangy flavor that is naturally reminiscent of lemon—without adding a drop of citrus.

Our sorrel is Rumex acetosa, also known as garden sorrel or common sorrel.

A few things that make this microgreen especially interesting:

🍋 BIG flavor in a tiny leaf
Sorrel has a naturally tart flavor from organic acids, including oxalic acid. A little goes a long way, making it perfect as an accent green.

👩‍🍳 A chef’s secret weapon
Try it with eggs, seafood, chicken, pork, potatoes, creamy dishes, or salads. That bright acidity can cut through rich flavors beautifully.

🌱 More than just pretty
Sorrel contains naturally occurring plant compounds, including polyphenols and other antioxidant compounds. Like other microgreens, its nutritional profile can vary depending on the growing conditions and harvest stage.

💚 A perennial plant
While we harvest it as a microgreen, the mature sorrel plant is actually a perennial herb that can return year after year in the garden.

✨ And then there’s the flavor…
It’s one of those greens that makes people stop and say,
“Wait…this actually tastes like lemon!” 😂🍋

We love growing specialty greens like sorrel because microgreens aren’t just about adding nutrients to your plate—they can add completely new flavors, textures, and experiences to everyday food.

CHICKEN SPOTLIGHT: GERTRUDE aka GERT

Say hello to Gertrude, better known around here as Gert. 💚

Gert is one of our Americana girls, and she has a pretty special job at Coastal Greens Farm:

🥚 She lays BIG beautiful blue eggs! 💙

A few fun facts about Gert’s type:

🌱 Blue eggs are blue all the way through the shell. The blue color comes from a pigment deposited during shell formation—not from something we feed the hens.

🐔 Americana/Ameraucana-type chickens are known for their colorful eggs, with shades ranging from blue to blue-green depending on the bird.

🌿 They’re also known for being hardy, curious foragers—a great fit for a little farm where chickens get to behave like chickens.

👀 And those fluffy facial feathers? They’re one of the traits associated with the Ameraucana family of chickens.

But honestly, our favorite thing about Gert isn’t just the color of the eggs.

It’s that every egg comes from an individual little bird with her own personality and place in our flock. ❤️

So when you pick up a dozen Coastal Greens Farm eggs and find a beautiful blue one tucked inside, you can think of Gert. 💙🥚

🌱 Community Spotlight: Hampstead Farmers Market

Every Thursday evening, something special happens in our little corner of Hampstead.

The Hampstead Farmers Market isn’t just a place to shop—it’s where our community comes together. Held at the Shaka Taco Beer Garden at Ironclad Golf Course, it’s the kind of place where you can browse local vendors, enjoy live music, grab dinner, sip a drink, and spend a relaxing evening with family and friends.

Kids have room to play. Parents get a chance to catch up. Dogs are always welcome. And local farmers, makers, bakers, and artisans have the opportunity to share what they’ve worked so hard to create.

For Coastal Greens Farm, this market has been about so much more than selling microgreens. It’s where we’ve met incredible customers, had meaningful conversations, answered questions about healthy eating, and built friendships with people who truly care about supporting local agriculture.

A heartfelt thank you to the organizer, Casey Glover, the vendors, Shaka Taco, Ironclad Golf Course, the musicians who bring the atmosphere to life, and everyone who comes out week after week to support local businesses. You’ve created a place where community comes first, and we’re grateful to be part of it.

🌱 WE DON’T WASTE. WE PUT IT BACK TO WORK. 🌱

This is one of the things we love most about what we’re building at Coastal Greens Farm. What looks like ‘waste’ after a harvest is actually the beginning of another part of the cycle. 🌱

At Coastal Greens Farm, we believe farming isn’t just about growing food.

It’s about being part of a cycle. ♻️🌱

When our microgreens are harvested, the work doesn’t stop.

Our trays are cleaned, sanitized, and reused as “live trays.”

And those beautiful roots we’re left with? They don’t go in the trash.

We return them to the soil, where organic matter breaks down, microorganisms keep working, and nutrients continue their journey. 🌎

Seed → Microgreen → Harvest → Roots → Soil → New Life

Nothing fancy.
Just keeping the nutrients moving. 💚

This is what regenerative farming looks like to us:

One of the greatest gifts a local publication can give a small business is the opportunity to tell its story.

I’m incredibly grateful to Topsail Magazine for recently featuring me as one of the women farmers highlighted in their Year of the Woman Farmer article. They didn’t just publish a beautiful story—they continued to support it by sharing it through multiple online promotions and showcasing so many of the photos that capture life here at Coastal Greens Farm.

As small farmers, we spend most of our time planting, harvesting, washing greens, caring for animals, and serving our communities. We don’t always stop to tell our own stories. That’s why publications like Topsail Magazine matter. They help connect readers with the people growing their food and remind us that agriculture is alive and thriving right here in our own community.
