Happy Hour 🍸
Thursday night’s have become virtual happy hour night with friends and tonight’s drink was a fun one. I had 1 oz , 1 can of unsweetened sparkling water, and 3/4 packet of pink lemonade .🍸

Anyone else snacking more than usual? 🙋🏻‍♀️
I’m normally home most days and don’t usually snack mindlessly, but with my kids home, I find myself snacking when they do.
It’s easy to take a bite or two of whatever I’m making them. Before I’ve even realized what I’m doing, I’ve downed a handful of goldfish.
Here are a few tips that have helped me keep snacking in check:
1️⃣ Record what you eat and when. This will help you notice any patterns and decide what needs to change. Maybe you’re not eating enough. Or maybe you’re stressed and find your self coping with food. Or perhaps, like me, you’re feeding your kids snacks.
2️⃣ Follow an eating schedule that includes all of your meals and snacks. It doesn’t have to be rigid. A meal time routine is meant to set a boundary for when it’s time to eat and when it’s not.
3️⃣ If you’re hungry outside of your scheduled meal times, try drinking water or another non-calorie drink. If you’re still hungry, then eat and log it.

Apple Pizza
In the town I grew up, there was a small pizza restaurant that sold apple pizza and it was so good. This is a delicious low calorie substitution for the tasty childhood treat I remember.
75g sugar free apple pie filling, diced (found at Walmart)
1 Joseph’s pita
11g whipped cream cheese
Spray butter
Cinnamon sugar
Splenda (optional)
Sweet shakes apple cinnamon (optional)
Preheat oven to 400 degrees. Spray a few pumps of spray butter to lightly cover the pita. Sprinkle cinnamon sugar and top with diced apple. Sprinkle cinnamon sugar in top of apples. Bake for approximately 6 minutes or until pita is toasted.
While pizza is baking, mix cream cheese with a small amount of Splenda. I used less that half of a packet. When pita is done, top with cream cheese and lightly sprinkle apple cinnamon seasoning.

Protein Pudding
I love pudding. This is a fast and delicious way to eat more protein without having to drink another protein shake or eat more meat.
It also taste like pudding and not protein powder. 🙌🏻
11 g instant pudding powder
5 oz premier protein
Whisk for 2 minutes then place the bowl in the refrigerator for 5 minutes so the pudding sets.
Eat plain or add toppings.
Macros for pudding: 103 cal 9c/1f/14p
Toppings I added were 1/2 chocolate chip cookie, 5g marshmallow bits, and 5g cool whip. @ Hershey, Pennsylvania

How to get the most nutrition from salad greens.
I’m a huge fan of salads and eat them daily. Not every variety of lettuce offers optimal antioxidants and some hardly offer any at all. Dark red/purple has the most antioxidants while iceberg has the least amount.
Here are a few tips to get the most antioxidants from salad greens:
-Buy whole head red, purple, and dark green leaves. Choose loose over tight arrangement of leaves.
-Wash leaves in cold water and dry in a salad spinner or with a towel.
-Tear leaves into bite size pieces and seal in a resealable bag pierced with 20 tiny holes. Tearing the leaves actually increase the amount of antioxidants available.
-Dress salad greens with unfiltered extra virgin olive oil to allow full absorption of fat-soluble vitamins.
-Add non-lettuce leaves such as spinach and arugula, other vegetables, fruits, and nuts to increase antioxidants and make a tasty salad.

I love eating fresh fruits and veggies as snacks and part of my meals. What I don’t like is having to prep fruits and veggies before every meal.
I’ve learned that if I have fresh produce prepped, I’m more likely to grab it. It also makes cooking meals easier and quicker.
What fresh produce do you always have prepped? I always have romaine lettuce, red onions, fruits, celery, carrots, and other veggies depending on the week’s meals.
