Inspired by both a recent trip to Greece and a deliver from Common Table | Hoboken, last night I made a gyro spiced chicken & vegetables, fresh tzatziki with dairy free yogurt from Kite Hill, and the crispiest fresh salad tossed in a mustard vinaigrette.

I was delighted to try Common Table | Hoboken’s local farm produce delivery service for the very first time — and was so blown away by the quality! Everything was packaged so adorably with directions on how to properly store each item.

Since it’s a bit of a mystery box, I felt like Iron Chef trying to land on a recipe to make with everything 😂 But with this recipe, I was able to use the torpedo onions, hard wick garlic, new potatoes, cucumbers, dill, cherry tomatoes, and lettuce!

Excited to keep cooking :)

Had to share this super yummy dinner I made tonight — I just stir fried chicken breast cut into strips in coconut aminos and lemon juice, paired with thinly sliced peppers, onion, and sugar snap peas that were quickly sautéed with avocado oil and coconut aminos so they keep a little bit of their crunch 🫛🧅🫑 Serve over rice with some fresh cucumbers on the side and voila!

Showcasing my boyfriend’s big daddy portion here but have been absolutely loving asian inspired bowls for dinner. It’s so easy to build a deeply nutritious meal!

For this one, I cut chicken breast into bite sized chunks and air fried them with a little bit of arrowroot flour, gf japanese barbecue sauce, and salt + pepper. I served that on top of a bed of rice, steamed edamame, and cabbage slaw that I dressed with toasted sesame oil, coconut aminos, and mayo. Scrumptious.

I’ve heavily taken inspiration from a trend I noticed during my recent trip to London — chives on softer scrambled eggs. Simple, but elevates your breakfast in such a significant way.

I’ve been bringing it back to basics lately by focusing on a really nutritious and protein rich breakfast to start my day off right and to help balance my blood sugar throughout the day.

Wanted to share a super easy dinner that just hits the spot when you’re not feeling super creative. Steamed rice, edamame, green onion, and chicken thighs cooked in gluten free japanese barbecue sauce with a sprinkle of sesame seeds.

It gives that sticky sweetness from the chicken and that vegetal freshness from the edamame, all layered over simple and comforting warm rice…. really what’s better?
