You actually have to prepay your Fire Marshal permit by bringing your propane inspection to the permitting center before your inspection day.

🚨 A lot of people don’t realize this:
The Fire Marshal inspection happens on the SAME DAY as your Health Department inspection…

❗ If you don’t have that prepaid Fire Marshal receipt…
👉 you will NOT pass inspection

Most permit jurisdictions require you to have NSF equipment but only the city of Houston wants proof.

The city of Houston health department requires you to submit the " Mobile food unit equipment specification sheet" where you list your equipment and the manufacturer and this includes the vent hood. They do this to make sure that your equipment wasn't handmade or fabricated and indeed came from a commercial source.

For those that are building food trailers and food trucks destined for the city of Houston permits, make sure that your fabricator is not constructing you a vent hood, but rather installing a purchased commercial hood.

For those of you purchasing used food trucks or food trailers destined for the city of Houston, make sure that the trailer or food truck that you're purchasing has an approved vent hood or you will need to install a new one.

Prepared but failed. Does this sound familiar? Read on.

Recently I attended a food trailer permit inspection with my client and we failed for not having disposable gloves.

The catch? No where in the paperwork did it say we needed gloves at the inspection.

I always tell my clients:

"Permits are 80% what's on paper, and 20% what's in the inspectors head".
