Eight independent bread brands that never sold out to Big Food. No artificial colors, no preservatives, no gums, no binders, no bleaching agents.

Real bread needs four things: flour, water, salt, and time. Almost everything else on a commercial bread label exists to solve a problem that only exists because the loaf has to survive weeks on a shelf.

That's the trade nobody explains. Preservatives stop mould. Dough conditioners speed up fermentation from hours to minutes. Bleaching agents whiten flour. Gums and binders replace the structure that time would have built. None of it is there for you. It's there for the supply chain.

And here's the practical part that catches people out. Genuinely preservative-free bread only lasts a few days at room temperature. That's not a flaw, it's the proof. Which is why these brands are almost always sold frozen. If you've been looking in the bread aisle, you've been looking in the wrong place.

This is the skill that outlasts any brand list: turn the loaf over. Flour, water, salt, yeast, maybe seeds, is what real bread looks like. A paragraph of ingredients you'd never keep in your own kitchen is a different product wearing the same name.

To be fair, the additives in commercial bread are permitted and used within legal limits. The honest objection isn't that one of them is poisoning you. It's that a loaf engineered for a three-week shelf life is a fundamentally different food from one made of four ingredients, and it's sold to you as the same thing.

You're not being sold bad bread. You're being sold shelf life, and the ingredients are the receipt.
