Today’s meatball meal features the chicken meatballs from my first Meatballs episode—if you missed it, the link is below. I’ve shared how I break up pasta before, but I included a quick refresher at the beginning of this video. Pasta often gets labeled as “bad,” but it can absolutely fit into a balanced meal. Choosing whole grain options when possible, pairing pasta with protein and vegetables, and keeping portions appropriate can help make it part of a nutrient-dense plate. In this video, I’m sharing two balanced meal-size options with a good mix of macronutrients. This meal comes together quickly when you already have pasta and meatballs stocked in the freezer. I used this particular pizza sauce instead of spaghetti sauce because it adds great flavor and is lower in sodium per ½-cup serving than many spaghetti sauces.

Guess what? It’s Taco Tuesday! Today I’m sharing an easy ground chicken taco meat recipe with ¾ cup of vegetables, 0.5 ounce of whole grain, and 2 ounces of protein per serving. To save time, use cauliflower rice from the produce or freezer section instead of chopping your own. You may also find shelf-stable riced broccoli and cauliflower near the grains, though they are vegetables—not grains. This recipe gets its whole grain from wild rice, which is technically a grass seed but counts as a whole grain. Vegetable “rice” and whole grain rice are not interchangeable because they come from different food groups and offer different nutrients. Ground chicken keeps the recipe budget-friendly, any no-salt-added beans will work, and low-sodium crushed tomatoes are a great option. I like Muir Glen fire-roasted crushed tomatoes for their flavor and lower sodium, but use what works for you. My goal is to help you think about food groups while making this recipe your own. Whole grains, seeds, nut butter, pancake mix, and sweet potato snacks all provide food group servings and are nutrient-dense options. Reading food labels is key because whole grains can be tricky to identify. Some products carry the Whole Grain Stamp, but not every brand pays to use it. It’s been a while since my last Taco Tuesday episode, so over the next few Tuesdays I’ll share updated taco meat ideas that make it easier to add more food group servings. These versions include vegetables, whole grains, and extra protein—like beans—right in the taco meat, along with balanced meal ideas to pair with each one. For this version, I’m using pork tenderloin because it’s lean and more than 50% cheaper than 96% lean ground beef. If you don’t have a meat grinder at home, ask the meat counter at your grocery store if they can grind it for you. The Siete seasoning is not reduced sodium, but it has great flavor, and I kept the other ingredients lower in sodium to help balance the recipe. I also like that it uses simple, natural ingredients. Muir Glen crushed tomatoes are lower in sodium than many canned tomatoes and still have good flavor. Cooked whole grain brown rice is an easy add-in, and the three-bean blend adds variety in one can. Target’s Good & Gather brand also carries a lower-sodium three-bean blend at a much lower price than the one I’m using.

Welcome to my new series, Meatballs! If this recipe seems familiar, it’s because I adapted it from my “Burgers Done Right” series with a few changes; see the link below for the burger version. Keeping cooked meatballs ready in the fridge or freezer makes meals so much quicker. I’ll be sharing a super-fast meal idea soon that uses cooked pasta from my freezer and jarred pizza sauce—just like that, dinner is done! Eating healthy doesn’t have to be hard, and the best part about these meatballs is they include real servings of vegetables, whole grains, protein, and dairy.

Last week, I shared five meals that all used the same three-grain blend. If you missed those videos, you can find the link below. In those videos, I mentioned I’d be sharing ideas for cooking proteins, so here they are! I keep lots of cooked proteins in my freezer, ready to add to any meal. I always talk about how important it is to have variety. While all animal meats have the essential amino acids, their vitamin and mineral content can change depending on what the animals eat, where they’re raised, and whether they come from land or water. That’s why I recommend including as much variety as possible.

Meal five has an Asian-inspired twist using the three-grain blend featured in Monday’s “How To Get Variety” video. For quicker prep, the vegetables can be steamed. I like Newman’s Own Sesame Ginger dressing because it is low in calories and relatively low in sodium per serving compared with similar products. I hope you enjoyed the five meal ideas from this week and find a few to add to your meal repertoire!
