🥭MANGO PAPAYA SAUCE RECIPE: It’s Mango season here in 🥭🥭🥭 They’re falling off the trees, and we’ve gotta do something with them. Here’s a Mango Papaya Sauce for putting on anything that needs putting on- salads, fish, meats, nachos, Buddha bowls, poke bowls, roasted veggies- you name it. It’s sweet and savory and packed with , vitamin c, and copper. Plus it’s way better than store-bought salad dressings. You can make this in your blender and store in a jar for up to a week🍋🥭🌴
SALTWATER CHEF’S TROPICAL MANGO PAPAYA SAUCE
2 ripe mangoes, peeled and cut up
1 ripe papaya, seeds removed and scooped out
Juice of 1 lemon + the rind
1/3 cup safflower oil (or grapeseed- something light- coconut oil will harden in fridge so I don’t recommend it)
2 Tbsp monk fruit extract granules or honey (I use monk fruit)
1/8 tsp salt + pepper to taste

Blend well in blender till emulsified and store in a Mason Jar for up to 1 week.

Happy Monday! Here is an easy, recipe for a nourishing, antiviral Beet/Carrot/Ginger Soup to get you through the start of a new week 🍲 There is lots written about ‘antiviral’ foods, but which foods are scientifically proven to be antiviral? According to a study published in NCBI, beets contain a compound called ‘BE27’, which is an effective antiviral protein. Fresh ginger (not powdered) was also proven in studies published by NCBI to be effective against H1N1, HSRV, Influenza, and the common cold (the study did not include ). Vitamins C, which has been used in hospitals to treat patients with ̇d19, decreases risk of pneumonia and respiratory infections. This recipe is rich in Vitamin C, and contains , apples, Carrots (vitamin A), and plenary of fresh ginger. This is delicious hot or chilled and leftover! It can be blended, or eaten with chunky veggies. But however you enjoy it, be sure to find the freshest, most organic produce, grown close to home 🏡 Recipe:
2 large beets cut into 1/2” cubes (about 3 cups)
3 cups carrots cut into 1/2” cubes
1/2 onion, chopped
1 Tbsp orange peel, grated (no pith)
2 apples, cubed
1/4 tsp salt, to taste
Ground pepper
2 Tbsp butter
1 Tbsp coconut oil
3-4 cups water
Heat oven to 400 f. Place beets and carrots on pan and rub with 1 Tbsp coconut oil. Drop butter on top. Roast veggies 20 minutes, stir, then approx 20 minutes more, watching closely not to burn. Stir as needed until beets and carrots are soft and caramelized. DO NOT SKIP THIS STEP or soup will not taste the same :)
Remove from oven.
In a skillet, melt 1 Tbsp butter and add onions and ginger. Cook in medium heat, stirring, until onions are soft. Add orange peel and apple cubes. Stir 1 minute until combined.
Add all ingredients to a soup pot and cover with 3-4 cups water. Add sal and pepper. Bring to boil, then reduce heat to medium-low, and simmer 20-30 minutes or until bright red. Blend in blender, if desired, or enjoy as is!!

It’s strange how this whole crisis has made me (and so many people I’ve talked to) appreciate the small things. I speak to friends around the world and hear stories of what has been like for them wherever they are. I have one friend in France who recently recovered from . She said it was rough. 🙏🏻 Urban spots pose particular challenges, and people are edgy and fearful for legitimate reasons...I’ve been trying, not always successfully, to practice staying tuned into hope, love, beauty, and imagination while things are crazy. So far beach walks (with social distancing, not gathering) are still legal here and I’ve never been more grateful for the ocean. I hope this way of deep noticing continues after this is over, and that people appreciate each other and the gifts in their lives even more. I saw 4 big sea turtles on the beach tonight and the colors went off in the sky. I felt like the luckiest person alive. If you’re in a dark place, or forgetting that there’s good out there, here’s a little reminder of beauty to brighten your day 🌺🌴🌊

Just before I came to my good friend John, owner and and creator at , sent me this handmade bag. Meticulously sewn from hand selected cowhide, this bag has been a workhorse for Island life. I can get it wet, inside and out, I can take it anywhere- beach, airports, shopping, hiking, and it takes a beating without showing any wear. My MacBook fits perfectly inside it as well! People stop me everywhere I go to ask where I got this bag. For the person who has everything- this shoulder bag is a game changer. 🌊🌈🌸 .
