🍝🍅🧀🔥 BURRATA + JAMMY TOMATOES = THE CREAMIEST PASTA SAUCE! 😱😍 Blend it until silky, toss in hot tagliatelle and watch every ribbon disappear under that dreamy pink-orange sauce! 🌿🤤✨
Ingredients
- 250–300 g tagliatelle or fettuccine
- 1 whole burrata, about 125–150 g
- 250 g cherry tomatoes, halved
- 2–3 garlic cloves, finely chopped
- 2–3 tbsp extra-virgin olive oil
- 1 handful fresh basil, plus extra for serving
- Red pepper flakes or sweet paprika, to taste
- Dried oregano or herbes de Provence, to taste
- Salt, to taste
- Freshly ground black pepper
- 50–80 ml reserved pasta water
- Optional October touch: a small pinch of fresh thyme
How to Make It
1. Cook the tagliatelle in generously salted boiling water until al dente. Reserve 50–80 ml pasta water, then drain.
2. Heat the olive oil in a skillet. Add the chopped garlic, followed quickly by the halved cherry tomatoes.
3. Season with salt, black pepper, dried herbs and red pepper flakes or paprika. Cook over medium heat until the tomatoes become soft and jammy.
4. Pour in the reserved pasta water and add a handful of fresh basil leaves.
5. Place the whole burrata in the center. Break it open with a fork and spatula so its creamy center melts into the tomatoes. 🧀
6. Transfer the tomato-burrata mixture to a suitable container and blend until completely smooth, creamy and velvety with a beautiful orange-pink color.
7. Return the sauce to the warm skillet. Add the drained tagliatelle and toss gently until every pasta ribbon is generously coated.
8. Finish with fresh basil and black pepper, then serve immediately while creamy and hot. 🍝🌿🍅
