Preserving the abundance.

Not so long ago in the timeline of human history, people preserved food in summer for winter.
With no supermarket shelves stocked with food trucked from warmer places, what you preserved was what you had to sustain you during winter.

Before electricity and refrigerators, root vegetables were stored in root cellars, and salted meats were the main winter menu.
Imagine how excited they were when the first green leaves emerged from the thawing snow.

Today I made arugula pesto and blanched kale and pac choi.

We are expecting slit tonight. I closed the cold frame and am hoping the peaches on my tree survive this. Nature is so dramatic.
