Well, this was fun.
I was honored to be asked to contribute to The Family and Scout Guide to Plant Foods, a new resource designed to help Scouts, families, and youth leaders learn how to make healthy food simple, delicious, and practical.
You know what's funny? We spend so much time trying to help adults undo decades of habits. What if we simply taught more kids how to cook?
How to make a pot of chili.
How to roast vegetables.
How to build a meal that actually fuels their bodies.
How to head out on a camping trip without relying on hot dogs and junk food.
Imagine that.
For nearly 20 years, I've been teaching people that healthy food doesn't have to be complicated, expensive, or weird. Give people a few basic skills, a little confidence, and some really good recipes, and amazing things happen.
That's why I love this project. It meets kids and families where they are and gives them tools they can actually use.
Huge thanks to Janet Pearson and Dr. Mary Anne Kiel for all the work that went into this book. I'm grateful to have been included among so many talented contributors.
Now if we can just get more kids excited about beans, we're really onto something. đđą
