This is one of my favorite lunches or dinners, put together in under 5 min. I start with a tuna packet, add a handful or baby carrots and a handful of fresh arugula. Cut up an avocado and microwave a bag of purple whole grain rice. Add extra virgin olive oil and fresh lemon on top with some salt and pepper. Voila! Protein and fiber forward with adequate carbohydrates. So delicious and convenient.
