Brought to you by Mint 'N More Foundation. Who is Mindful Nourishment Matters? Several years ago, Iowa native, Mikol Sesker purchased 20 acres of farmland in Marion County with a family dream to operate a sustainable organic farm. The property includes a historic home that was moved from Central College and is undergoing renovation. Mikol partnered with her siblings, Nathan Sesker and Megan Sesker

Enriquez, to work on Mint ‘N More, the micro-scale organic family farm strategically named to represent the initials of the three siblings. They got to work creating buffer zones and planting beds before Nathan’s death from cancer in May 2017. Today Mint ‘N More is pushing forward with refined vision and action in honor of the family dream and a renewed spirit to prevent and minimize chronic illness through healthy food and growing practices. In the fall of 2024, Mikol hired Megan McKay, a native Knoxville entrepreneur, to help define the vision and purpose of the organization and start putting ideas into action. To break it into action, there are three main themes:
-Connecting Eaters to Food Sources with education on healthy eating, promoting home and community gardening as well as supplying plants and seeds.
-Operating a Regenerative Organic Demonstration and Incubator Farm to produce organic foods and plant medicine with regenerative practices and provide farm incubator space and resources for new farmers
-Convene Farmer Resources by aggregating research from the best sources, provide business support services, develop markets for regenerative organic products and maintaining a focus on soil health

The refined vision of Mint ‘N More is Cultivating Health by Nourishing Agriculture. The organization is now structured into two parts: Mint ‘N More Farm which will focus on a demonstration farm and incubate new farmers and Mindful Nourishment Matters, outreach to consumers on healthy eating and creating markets for locally grown healthy foods. After initial research, it’s clear that before Mint ‘N More can incubate new farmers we first need to shore up the market for local, chemical free foods produced with practices focused on soil health. To further this goal, we will be hosting quarterly free public education events that present new ideas on health and wellness topics as well as other outreach projects to be announced.

Market Spotlight: 🐷 Vendor Spotlight: Meet Crooked Gap Farm

Run by Ethan and Rebecca Book just outside Knoxville on the "Crooked Road to Melcher," Crooked Gap Farm has been pasture-raising heritage and rare-breed animals since 2008 — including their Hereford hogs. It's that slower, pasture-based approach (not the typical confinement route) that gives their pork its rich flavor and marbling. Not to mention is fantastic for building soil health and protecting local water quality.

🍳 Try it: Breakfast Sausage Skillet

1 lb Crooked Gap Farm breakfast sausage
2 cups diced potatoes
1 bell pepper, diced
1/2 onion, diced
Salt & pepper

Brown the sausage in a skillet over medium heat, breaking it up as it cooks; remove and set aside. In the same skillet (don't wipe it out — that's flavor), add potatoes, pepper, and onion. Cook 10-12 minutes, stirring occasionally, until potatoes are tender. Stir the sausage back in, season with salt and pepper, and serve hot.

Community Garden Update: Our gardeners have been harvesting wonderful produce all summer but as we look toward the back half of the season it doesn't mean we are done!

Succession Planting is a way of getting produce into the fall. To have a successful succession it requires staggered sowing. Instead of planting an entire seed packet in the spring, use some left over seeds in late summer for early fall crops. You can start them indoors if they are cooler weather crops or direct sow. Don't have seeds left over? Stop by our office hours at 112 S First Tue 10-5 or Wed and Thursday 10-6 and look through our seed library Let's keep the harvests going!

Just picked up your order at Gathered Local Foods or need some inspo for your farmer's market haul? Here's what we're making with this week:

One-Bowl Chopped Summer Veggie Salad

1 zucchini, diced small
1 cup cherry tomatoes, halved
1 cup corn kernels
Handful of fresh parsley or basil, chopped
Olive oil, lemon juice, salt & pepper

Toss it all in a bowl with a glug of olive oil and a squeeze of lemon. Salt, pepper, done.

Ten minutes, minimal cleanup, all local. Mix in some chickpeas or blackeyed peas to make it a meal!

PRODUCER SPOTLIGHT: Blue Gate Farm - Jill Beebout and Sean Skeehan have been farming the Beebout family land in rural Marion County — just south of Knoxville — for 21 years, producing chemical-free vegetables, fruits, flowers, jams, and seasonings. Their vegetables, flowers, and herbs will be featured throughout the Farm to Table Dinner! You can get their produce year-round through their weekly VegEmail ordering program or at Gathered Local Foods Market. Twenty-one years of feeding this community fresh from their land — we're so glad they're part of this dinner!

We are highlighting the local producers who will be providing the food for the Second Annual Farm to Table Dinner on August 22 at Countryside Events. The dinner is being put on by Jonith and team at Hometown Meats & Deli.
