🫠August’s recipe of the month is a cooling hibiscus ginger watermelon popsicle. This delicious popsicle is heart healthy and perfect for a hot, back-to-school summer treat for kids and adults!

🌺Ingredients:
¾ cup filtered water
2 tbsp dried hibiscus flowers
1 inch fresh ginger peeled + finely chopped or grated for more flavor
¼ cup honey
¼ cup fresh mint
4-5 cup fresh watermelon
the juice of 1 lemon

🌺Directions:
Bring the water to a boil in a medium size pot. Remove from the heat and add the hibiscus flowers, ginger, honey and mint leaves. Cover and let steep for 20 minutes. Strain into a blender and discard the used hibiscus flowers, ginger and mint.

To the blender, add the watermelon and lemon juice. Blend until smooth. Strain the mixture through a fine mesh strainer/sieve or into a bowl lined with cheesecloth. Squeeze out all the juice and discard the watermelon pulp.

Pour the mixture among 8 popsicle molds. Place the molds in the freezer and freeze for 1 hour. Remove and insert popsicle sticks. Return to the freezer and freeze until firm, about 4 hours. To remove the popsicles run the mold under hot water for 10 seconds and then pull the popsicles out of the molds. Store in the freezer.

🌺Hibiscus flower, hibiscus sabdariffa, is an ancient herb perfect for our hot, desert summers. Originating in ancient Sudan, it has been cultivated and used widely in traditional medicines throughout Africa, and brought to the “new world” through enslaved peoples. In ancient Egypt, hibiscus tea was recognized for its distinctive tart, cranberry-like flavor, used as a symbol of prosperity, joy, and vitality, called "Karkadeh", the Tea of the Pharaohs.

🌺Hibiscus has been used traditionally to treat cardiometabolic disease, respiratory and digestive illnesses. Hibiscus may naturally lower both systolic and diastolic blood pressure due to its ACE inhibitor-like effects and antioxidant content such as anthocyanins, flavonoids, and organic acids. These compounds also help lower total and LDL (inflammatory) cholesterol. Research demonstrates hibiscus tea reduces systolic blood pressure by 7.5 mmHg, comparable to some pharmaceutical interventions. The diuretic effect supports fluid balance without depleting potassium.

🌺Hibiscus also is highly nutritious, with high amounts of fiber, protein, vitamins, and minerals. All parts of the plant can be used, however, most people mainly recognize the ruby red dried flower pedals or the candied dried flower. Rich vitamin C content provides antioxidant protection against cellular damage and increased sun exposure and protects your digestive system from infectious bacteria by promoting a healthy microbiome.
