Meal Prep Mondays:

Philly Cheesesteak Stuffed Peppers

Ingredients:
4 medium green bell peppers (4 cups)
1/3 cup diced yellow onion
2 tsp minced garlic
1/4 cup low sodium beef broth
6 oz sliced baby bella mushrooms
1 lb thinly shaved, deli roast beef or thinly sliced steak
4 tbsp low-fat cream cheese
4 oz reduced fat provolone cheese, sliced

Directions:
Preheat oven to 400 degrees.
Slice peppers in half lengthwise, remove ribs and seeds, and set aside.
In a large skillet, saute, the onions and garlic in broth over medium-high heat for about 5 min, or until onions are translucent. Add the mushrooms, and continue to cook until mushrooms are tender.
Mix in the roast beef and heat through, about 3 to 5 min. Remove skillet from heat, and stir in cream cheese.
Fill each pepper with an eighth of the roast beef mixture, then top each half with a 1/2 ounce of cheese. Bake for 15 to 20 min until peppers are tender and cheese on top is melted and bubbly.

Meal Prep Monday:

Mediterranean Ground Turkey Wrap with Creamy Lemon Honey Feta Cream

Ingredients
For the Ground Turkey Filling
1 lb (450 g) ground turkey
1 tablespoon olive oil
2 cloves garlic, minced
½ small onion, finely diced
1 teaspoon paprika
1 teaspoon dried oregano
½ teaspoon ground cumin
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
For the Creamy Lemon Honey Feta Cream
½ cup feta cheese, crumbled
½ cup Greek yogurt
1 tablespoon olive oil
1 tablespoon honey
1 tablespoon fresh lemon juice
½ teaspoon lemon zest
1 small garlic clove, minced
1–2 tablespoons water (to thin if needed)

For the Wrap Assembly
4 large tortillas, pita, or flatbreads
1 cup shredded lettuce
1 cup diced cucumber
½ cup cherry tomatoes, halved
¼ cup thinly sliced red onion
Optional: sliced avocado or olives

Instructions
1. Cook the Ground Turkey
Heat 1 tablespoon olive oil in a large skillet over medium heat.
Add the diced onion and cook for 2–3 minutes until soft.
Add the minced garlic and cook for 30 seconds until fragrant.
Add the ground turkey and cook for 6–8 minutes, breaking it apart with a spoon until fully cooked.
Stir in paprika, oregano, cumin, salt, and black pepper.
Add lemon juice and chopped parsley.
Stir well and cook another 1–2 minutes, then remove from heat.
2. Make the Lemon Honey Feta Cream
In a small bowl combine:
Crumbled feta cheese
Greek yogurt
Olive oil
Honey
Lemon juice
Lemon zest
Minced garlic
Mix well until creamy.
If the sauce is too thick, add 1–2 tablespoons water until it becomes smooth and spreadable.
Taste and adjust seasoning if needed.
3. Warm the Wraps
Lightly warm tortillas or pita in:
A dry skillet for 20–30 seconds per side, or
Microwave for 10–15 seconds.
This makes them softer and easier to fold.
4. Assemble the Wraps
Lay a warm tortilla flat on a plate.
Spread 2–3 tablespoons of the feta cream sauce down the center.
Add a layer of shredded lettuce.
Spoon seasoned ground turkey on top.
Add cucumber, tomatoes, and red onion.
Drizzle extra feta sauce over the filling.
5. Fold the Wrap
Fold the bottom edge up slightly.
Fold the sides inward.
Roll tightly from the bottom to form a wrap.
Serving Suggestions
Serve the wraps with:
Mediterranean salad
Roasted potatoes
Hummus or tzatziki
Lemon rice or quinoa
