Okay, but can we talk about how GOOD this fall sheet-pan dinner looks?! 🤤🍠

Butternut squash, sweet potatoes, crispy bacon, kale, and all those cozy fall flavors in one pan. Yes, please!

One thing about me? After 12 years of living with multiple sclerosis, I’ve learned that nourishing my body doesn’t have to mean spending hours in the kitchen.

I love meals that are colorful, packed with whole foods, and actually make me excited to eat. And the fewer dishes I have to wash afterward, the better. 😂

That’s one of the reasons I’ve been loving Hungryroot. It makes putting together meals like this so much easier, especially on days when my energy is limited.

12 years with multiple sclerosis. And then one relapse changed everything.

I went from being active and independent to needing a wheelchair, then a walker, then walking sticks.

And now? I’m walking again. 🥹🤍

But the journey back has been anything but easy. So much physical therapy, so many ups and downs, and so many days where even the smallest things take more energy than they should.

And while I’m incredibly grateful for how far I’ve come, I’m still not where I want to be.

I miss running. I miss hiking without thinking twice about every step. I miss being able to trust my body.

But I’m not done trying.

I don’t know exactly what my recovery will look like, but I’m determined to find out how far I can go.

If you’re new here, I’m documenting my journey of rebuilding my life with MS. Follow along because this comeback is still being written. 🤍

Flew all the way to Canada for another round of MS treatments just to spend 90% of my free time bed rotting and watching Ted Lasso 😂🇨🇦

These treatments have been WIPING me out, so apparently my Calgary itinerary is:

✨ MS treatment
✨ Bed rotting
✨ Ted Lasso
✨ Repeat

But we’re calling it ✨active recovery✨ because it sounds more productive. 🤣

Honestly, sometimes resting IS the most productive thing I can do.

Anyone else with chronic illness have to schedule their entire life around recovery time?

Day 6/30 🤍 Rebuilding with MS.

Yes… I skipped a few days. Life has been a little all over the place, but I’m back.

And this time I’m back in Canada for another round of MAM treatment.

People keep asking me why I’m doing it again.

The simplest answer is: I want to get better as much as I possibly can.

I haven’t been able to run since around 2022, and I miss that version of me more than I can explain.

I miss feeling athletic.
I miss having energy in my legs.
I miss moving without having to think so hard about every step.

That part of myself has always meant so much to me.

Do I know if I’ll get all of that back?

No.

But I hope I do.

And honestly, I hope I come back even stronger.

My first round of MAM gave me progress that made me want to keep going, so I’m here again, doing another round, continuing PT, and doing everything I can to give my body the best chance to keep improving.

I don’t know exactly what this next chapter will look like.

But I’m not ready to stop believing I can run again. 🤍

CHICKEN POT PIE, but make it gluten-free and dairy-free! 🥧🍂

Welcome to week 2 of my cozy fall recipe series!

There’s just something about homemade chicken pot pie when the weather starts cooling down. The creamy filling, tender veggies, and golden crust are everything I want in fall comfort food. 🤎

This recipe is inspired by the talented Michelle at ! I followed her Paleo Chicken Pot Pie recipe with a few tweaks to fit my own dietary needs and preferences.

Here’s what you’ll need:

🥕 Chicken and fresh veggies
🥥 Coconut milk and chicken broth for the creamy filling
🌿 Thyme, sage, and garlic for flavor
🥧 A homemade grain-free crust

I made a few personal adjustments, but all credit for the original recipe goes to !

You can find her complete recipe and instructions here:

Day 5/30 🤍 And tonight we’re doing something a little different…

VERITY. 👀

I first read this book in 2022 and I was 100% TEAM MANUSCRIPT.

No hesitation. 😂

Then in 2024, I listened to the audiobook and somehow found myself leaning more toward TEAM LETTER.

And now here we are in 2026… four years after I originally read it, about to watch the movie, and I genuinely have no idea what I believe anymore. 😂

So much life has happened since 2022. I’ve had more experiences, more perspective, and hopefully a little more wisdom… and now I keep going back and forth between the two.

So I’ve decided I’m letting the movie settle it for me.

Team Manuscript or Team Letter?

TBD. 👀🍿

But honestly, this night means a little more to me than just seeing one of my favorite books come to life.

Since my MS flare, it’s been really easy to tell myself I’ll do things when walking feels easier, when I have more energy, or when I feel more “normal” again.

Tonight I’m reminding myself that I don’t have to wait until recovery is finished to enjoy my life.

I can still be rebuilding AND go do something that makes me happy. 🤍

Now tell me… are you Team Manuscript or Team Letter?! 👇

Day 4/30 🤍

I wish recovery were as simple as finding one thing that changed everything.

For me, it hasn’t been.

It’s been PT.
Walking.
Working on my drop foot.
Managing my energy.
Using tools that make movement easier.
Eating in a way that supports my body.
Trying different therapies.
Resting.
Starting again the next day.

It’s been a lot of small things, repeated over and over.

And I think that’s the part people don’t always see.

Progress can look really boring while you’re in it.

It can look like doing the same exercises again.
Choosing rest when you want to push.
Showing up on the days you feel strong and the days you don’t.

But when I compare where I am today to where I was even a month ago, I can see that those small things are adding up.

My MS recovery hasn’t come from one magic answer.

It’s been a rebuild.

One small step at a time. 🤍

Day 3/30 🤍

Today was a reminder that recovery is not linear.

I went to bed with a slight headache and woke up in the middle of the night with a horrible migraine and nausea that stayed with me for hours.

By the time it finally started easing up, I felt completely drained.

And when you’re recovering from an MS flare, a day like that can really get in your head.

You start wondering if you’re losing progress.

If you’re going backwards.

If yesterday’s strength was somehow temporary.

But I’m trying to remind myself that one hard day does not erase everything my body has been working toward.

Sometimes your body just needs more from you.

More rest.
More patience.
More grace.

And sometimes a hard day is just that — a hard day.

It does not mean the progress is gone.

A hard day is not the same thing as going backwards. 🤍
