Strawberry Basil Chicken

4 large chicken breasts, pounded 1-inch thick
4 tbsp. balsamic vinegar, no sugar added
2 tbsp. olive oil, divided
2 garlic cloves, minced
1โ„4 tsp. red pepper flakes
1โ„4 tsp. black pepper
1 cup fresh basil, chopped
2 cups strawberries, chopped

1. Set the chicken breasts in a plastic bag or shallow dish. Whisk the balsamic vinegar, 1 tablespoon of the olive oil, garlic, red pepper flakes, and black pepper. Then pour evenly over the chicken. For best results, marinate a few hours or overnight.

2. Heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the chicken to the hot pan and cook for about 5 minutes per side, or until golden brown and cooked through.

3. Meanwhile, toss the strawberries and basil together.

4. To serve, top each chicken breast with the strawberry basil mixture and finish with more black pepper, if you wish.

Ground Turkey Butternut Squash

2 tbsp. extra virgin olive oil
1โ„2 cup onions, diced
1 tsp. garlic clove, minced
1โ„2 cup red pepper, diced
1 lb. ground turkey
2 cups butternut squash, diced
2 cups brussels sprouts cut in quarters
1 large tomato, pureed and deseeded
1โ„2 cup beef broth, no sugar added
1โ„2 tsp. ground black pepper
1 tsp. Italian seasoning
1โ„4 red pepper flakes

1. Use a cast iron skillet or a pan, heat with 2 tbsp of olive oil on medium heat. Add the onions and garlic and let them caramelize for 3-5 minutes. Stir in the red pepper, let it cook for 3 minutes.

2. In the same skillet, add the ground turkey and use a wooden spoon to break up the turkey while it's cooking. Cook for about 6 minutes and stir occasionally.

3. Once the ground turkey is cooked, add the diced butternut squash, quartered Brussels sprouts, tomato sauce, and beef broth. Incorporate well then season with spices.

4. Put a cover over the skillet and let it cook for about 6-8 minutes until the butternut squash is softened and stir occasionally.

5. Once everything is cooked, put an even amount of turkey butternut squash mixture into four different glass containers or eat some right away as your family dinner meal.

One-Skillet Chicken with Spinach & Mushroom

2 tbsp. olive oil
1 lb. chicken breast, cubed
1โ„4 cup vegetable broth
2 cups mushrooms, cleaned and sliced
1โ„2 cup yellow onion, chopped
4 cloves garlic, minced
2 tbsp. balsamic vinegar, no sugar added
3 cups packed baby spinach
2 tbsp. fresh parsley, chopped

1. Heat olive oil in a medium skillet or cast-iron pan on high heat. Brown chicken for 8-10 minutes, flipping halfway through. When the chicken is done, remove from pan, place on a plate, and cover with foil.

2. Using the same pan, add vegetable broth, mushrooms, and onion. Cook until browned (about 5-7 minutes). Add garlic and cook for 30 seconds, then add balsamic vinegar.

3. Return chicken to the pan and add baby spinach. Cover with a lid and cook 2-3 minutes to wilt the spinach and warm the chicken through.

4. Serve warm and sprinkle with fresh parsley.

Sheet Pan Asparagus and Lemon Chicken

1 lb. boneless, skinless chicken breasts
1 tsp. herbes de Provence
1 garlic clove, minced
2 tbsp. olive oil
1 tbsp. lemon zest
1โ„8 cup freshly squeezed lemon juice
1โ„2 tsp. ground black pepper
1 bunch asparagus
1โ„2 yellow onion, thinly sliced
1 lemon, thinly sliced
Parsley, for garnish

1. Preheat oven to 400ยบF and line a baking sheet with parchment paper. Place chicken breasts evenly spaced on the sheet and leave aside.

2. In a small bowl, mix together the herbes de Provence, minced garlic, olive oil, lemon zest, lemon juice, and pepper until well combined.

3. Slowly pour half the lemon mixture over the chicken. Bake until almost done, about 20 minutes.

4. While chicken cooks, trim asparagus and slice onion. Toss vegetables with remaining herbes de Provence mixture. (Reserve some seasoning for later.)

5. Remove chicken from oven and set to low broil. Arrange asparagus and onion around the edges of the pan. Pour remaining seasoning over the chicken. Add lemon slices.

6. Broil until the asparagus is crisp-tender and chicken is golden brown, about 10 minutes.
Sprinkle with fresh parsley and serve immediately.
