You may be hearing about a multistate outbreak of cyclosporiasis and wondering how to avoid it and other food-borne bugs. Currently the outbreak is linked to contaminated shredded iceberg lettuce and predominantly in the Midwest. Symptoms are frequent, watery diarrhea, nausea and vomiting, severe bloating, stomach cramps, fatigue and weight loss and appear about a week after exposure though two days to two weeks is possible . HOW TO REDUCE THE CHANCE OF PARASITES FROM FOOD: Wash all produce under running water, peel or remove outer layers of leafy greens and cook produce when possible. As always, wash your hands with soap and warm water before and after handling food.
