What’s for dinner?

Grilled Salmon, Roasted Baby Bella Mushrooms and Asparagus, and Farro

This simple marinade of soy sauce, brown sugar, a hint of lemon, and garlic give the rich salmon a sweet, savory flavor.

And always need veggies in some form on my plate! This easy, tasty recipe complements chicken, fish, or steak, or tofu, rice or pasta for a vegan meal.

From the Emilia-Romagna region, we traveled to the region of Veneto off the Adriatic Sea. In Veneto, we visited Verona and then Gargnano, and Limone on Lake Garda.

Then we traveled to the region of Lombardía (Lombardy) where we stayed in Milano.

Verona specializes in Risotto with Amarone- it’s the Amarone wine that gives its distinct flavor and color. A typical starter dish is zucchini flowers stuffed with ricotta cheese. My favorite is melanzana (eggplant) stuffed with stracchino cheese, a cow’s milk cheese with a mild, tangy flavor and a gooey, buttery texture, similar to Cresenza cheese. I can’t lie, I loved the chocolate mousse and Gelato too. And Limone is the home of lemons in Lake Garda- watch for the lemon surprise!

Milano in Lombardía is vibrant, robust, active, and stylish. The food presentation is dramatic! For starters, there is scarpetta tricolore con focaccia calda e ragú (tricolor scarpetta, the color of the Italian flag, with hot focaccia and ragú). Primi course of fresh pasta with ragú. And for a second course, Cotoletta allá Milanese vestita con rucola e pomodorinin (Veal Milanese with arugula and cherry tomatoes. Why not?! We are now in Milano!!! Then for dessert, a pyramid of cream puffs filled with chantilly cream and drizzled with chocolate syrup served at the table. And a tower of creamy gelato with any topping of your choice also served table side.

Different Regions, and even, different Cities within the 20 Regions of Italy, have their own typical foods and dialect. Here, we are focusing on the cuisines from the Region of Northern Italy, Emilia-Romagna. This includes cities of Bologna, Modena, and Parma.

In Emilia-Romagna, Bologna is known for its Mortadella, pasta or gnocchi with ragú, fresh and grilled vegetables, Balanzone filled with ricotta and mortadella, and Tortellini in Brodo (tortellini in broth). And Modena, of course is known for balsamic vinegar, but also Gnocco fritto with prosciutto and torteli with b***o e salvia (butter and sage).

Different Regions, and even, different Cities within the 20 Regions of Italy, have their own typical foods and dialect. Here, we are focusing on the cuisines of Sardegna (Sardinia, specifically in Chia) and Regions of Northern Italy, including Liguria (Italian Riviera- Genoa, Santa Margherita Ligure, and Portofino).

Sardegna is the second largest island in the Mediterranean Sea. It is considered the Blue Zone because of its world’s largest concentration of centenarians. This longevity is contributed to natural physical activity, a plant-based diet with red meat once a week, red wine, and a strong community. Typical dishes include vegetarian meals such as risotto with vegetables and raviolis with ricotta cheese, and fresh vegetables.

In Liguria, Genoa is known for its pesto. Santa Margherita Ligure’s typical dishes include Sea Bream, a white, mild fish like sea bass, and vegetables.
