Garlic Herb Chicken with Mashed Potatoes and Glazed Carrots
Ingredients :
For the Garlic Herb Chicken
4 boneless, skinless chicken breasts
2 tbsp olive oil
4 cloves garlic, minced
1 tsp dried thyme
1 tsp dried rosemary
1 tsp dried parsley
1/2 tsp paprika
1 tsp salt
1/2 tsp black pepper
1 tbsp fresh lemon juice
For the Mashed Potatoes
2 lbs Yukon Gold potatoes, peeled and cubed
4 tbsp butter
1/2 cup milk
1/2 tsp salt
1/4 tsp black pepper
For the Glazed Carrots
1 lb carrots, peeled and sliced
1 tbsp butter
1 tbsp honey
1/2 tsp dried thyme
1/4 tsp salt
For Garnish
2 tbsp fresh parsley, chopped
Directions :
Place the potatoes in a large pot of salted water. Bring to a boil and cook for 15β20 minutes until fork-tender.
While the potatoes cook, combine olive oil, garlic, thyme, rosemary, parsley, paprika, salt, pepper, and lemon juice in a bowl.
Rub the mixture over the chicken breasts.
Heat a large skillet over medium-high heat and cook the chicken for 6β7 minutes per side, or until golden brown and the internal temperature reaches 165Β°F (74Β°C).
Remove the chicken from the skillet and let it rest for 5 minutes.
Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.
In a separate skillet, melt butter over medium heat. Add carrots, honey, thyme, and salt.
Cook for 8β10 minutes, stirring occasionally, until the carrots are tender and lightly glazed.
Divide the mashed potatoes among serving plates.
Top with garlic herb chicken and serve alongside the glazed carrots.
Garnish with fresh parsley and serve warm.
