C is for cookie Coral’s cookies- this is by far my favorite cookie in the world. These are gluten free, dairy free, refine sugar free but full of flavor and love. I do not have sweet tooth but chocolate chip cookies are my weekends and trust me… when I found out on 2011 that dairy and gluten weren’t doing any good on me I really suffer. I desperately started testing and playing in the kitchen with different compliant ingredients until I came up with this magical recipe. Over time I’ve been modifying it until this beauties showed up. They are chewy and soft and have a silky flavor perfect to have them with a glass of the milk of your preference or a cup of coffee. Perfect snack or the final touch of your last meal. The alternatives are endless.

I recently did this deliciousness… can someone guess what is it? It is a Flan! Flan is a Latin recipe that is very common in Puerto Rico specially at this time of the year. However, the original recipe is full of dairy and in PR most people add cream cheese to it to make it even more rich. Eating the regular recipe kills us bc we can’t tolerate that amount of dairy and I was frustrated of seeing my husband to miss out this deliciousness and not being able to share with my kids this part of my culture that I enjoy so much. If you know me you know that I love to recreate recipes with ingredients that are suitable for different conditions. I decided to come up with with a dairy free option and trust me on this one but, I blind tested with my brother and my nephew and they couldn’t notice the difference. Even my husband couldn’t tell. It is absolutely delicious and … I’ll leave you the recipe bellow so you can try it and share with me what do you think. Enjoy!

It is creamy and silky spinach and lemon sauce over a chicken breast that is laying ove a a bed o buttery sweet potato. Spring mix with a mustard vinaigrette and this was heaven on a plate…

Thank you for this amazing, saving lives recipe. You save had me covered yesterday. I had no idea what to do for dinner and was not interested and what I planned for that day. I had a chicken in my refrigerator and 💥this recipe was whipped up in no time. Only 10 min in the air fryer and the chicken was very tender and juicy. So easy and so delicious. My kids were soooo happy! Fallow for the recipe.

These Paleo pancakes from are simple delicious. Sof, fluffy, filling and very tasty. You can get creative and add to the mix what you want. I’ll share with you what I add to mine. I follow the pack instructions adding ghee as oil and almond milk instead of water then I add 🤫 collagen from and protein poder from I pan fry them using ghee and decorate them with grain free granola and almond butter
