It’s been a while since I’ve done a formal giveaway, and I’m super excited to share this one with you! Hopefully you know my love of grass-fed, pasture raised, sustainable farming. But if not let me explain a little: when you purchase and eat animal products who get to roam and eat grass you greatly increase the nutrient value, lessen the toxins, and get zero added antibiotics or growth hormones. Plus you are supporting small, local farmers who truly care for their animals. Yes grass-fed and grass-finished is usually more pricy, but the benefits far outweigh eating conventional meat in my opinion. I vote with my dollar in hopes of making change!

Family owned and operated in Gilman, Wisconsin, Spring Cut Cattle Company provides quality and convenient 100% grass-fed and grass-finished beef to support your family’s healthy lifestyle. If you drove to their farm there would be no question they are doing things the right way! They also have chicken and ship to all states besides Hawaii and Alaska. Please enter this giveaway by going to the link in my bio and while you wait for the winner to be announced check out their website for all their fabulous products! Buy in bulk to save or check out their subscription options (this is what I’ll be doing). Please reach out with any questions.

The giveaway runs through Sunday, March 20th and the winner will be personally notified.

SPAGHETTI SQUASH PIZZA PIE

This has been one of my stable recipes around our house the last two years, and I just realized that I’ve never shared it in a post so let’s get to it! If you aren’t familiar with spaghetti squash it’s a super cool vegetable that strands out like spaghetti noodles when cooked. I cook mine in the microwave most times, and that’s how it’s written in this recipe as it’s the quickest and simplest in my opinion. This casserole has lots of veggies, sausage AND pepperoni, and so much flavor! It’s everything you love about pizza but low carb! I’ve made this for a family who is dairy-free and they use vegan cheese and say it tastes great. A gluten and dairy-free pizza casserole; what’s not to love?!

Head to my website or the link in my profile for the recipe! And please let me know if you make it 😊

You all asked for this and I’m here to deliver! It’s kind of comical how much I thrive on finding healthy, easy products like these for my family. Keep in mind these are just the non-perishables I will offer; we always have fruit, yogurt, and sometimes a baked item like breakfast cookies, banana blender pancakes or muffins on hand. But these are my go-to pantry items that work well on the road or when you have a baby on your hip! Ingredients and quality matter to me, but that does typically mean higher prices so for some of these brands I only purchase them when they are on sale or my grocery store has $1 off coupons.

Thrive Market has great prices and runs lots of sales so I’ll stock up from time to time and with brands like Serenity Kids, Dino Bars, and Skout Organic I buy in bulk during a sale or use my affiliate code to save (as should you 💜).
I have links and codes to save , , and in my profile link or please message me as I’d love to hook you up!

Eli LOVES, and I mean LOVES, the chocolate peanut butter, cookie dough, peanut butter and jelly, and apple pie bars. These bars are made with 10 ingredients or less and 100% organic. Four of the flavors are completely peanut and tree nut free too so they are great for school!

If you’ve been around here a bit you know I’m a HUGE fan or and everything they do and make. They only work with small, local farmers who care about their animals, plants, and sustainability. All ingredients used are organic, raised grass fed, and cared for well. The pouches all include a form of healthy fat which is crucial for baby’s developing brain and nutrient absorption. Their puffs are great for a simple car distraction or working on that pincer grasp. Eli still eats a pouch from time to time, and Raelynn literally kits her feet and dances in her chair when I pull one out 😂

Meat sticks are a great protein source and easy/clean for stroller walks. And for some reason my kid eats dates like candy (wonder who he got that from!), so we always have those on hand.

And if you haven’t tried the crackers or new sweet thins by you need to asap!

Let's talk about cereal....⁣

If you've been around my page for any length of time you know I don't recommend cereal on a daily basis, but in reality cravings come (especially when pregnant 😆) and getting food in our kids' bellies can be stressful in the morning some days. So if you do choose cereal these are the brands I recommend: and (only available online but great for gut health).⁣

So what's the big deal, why don't I recommend most traditional brands? One of the main reasons I chose the cereals on the right is that they are all organic which is important to me. Organic indicates the grains used did not undergo spray from glyphosate. Glyphosate, the most widely used herbicide in the world, was listed by the California Office of Environmental Health Hazard Assessment as a chemical known to the state to cause cancer. In addition, the cereals on the left contain ingredients that can be pretty toxic when eaten regularly over time. These include things like:⁣

❌𝗕𝗛𝗧: (butylated hydroxytoluene) is a lab-made chemical that is added to foods as a preservative. BHT is not a listed carcinogen, but some data has shown that it does cause cancer in animals. Rats fed BHT have developed lung and liver tumors (EFSA 2012). BHT has also been shown to cause developmental effects and thyroid changes in animals, suggesting that it may be able to disrupt endocrine signaling (EFSA 2012).⁣

❌𝗮𝗿𝘁𝗶𝗳𝗶𝗰𝗶𝗮𝗹 𝗰𝗼𝗹𝗼𝗿𝘀 (caramel color, yellow 5, red 40, etc.): According to the American Academy of Pediatrics, existing research raises concerns about these dyes and their role in child behavior and exacerbating attention deficit hyperactivity disorder, and eliminating them may be beneficial.⁣

❌𝗰𝗮𝗻𝗼𝗹𝗮 𝗼𝗶𝗹: comes from the plant canola that is genetically modified and the oil is highly processed (goes through hexane extraction and bleaching). The oil leads to oxidative stress.

This post is not meant to induce fear by any means! I used to eat cinnamon toast crunch and Life cereal often when I was younger. This knowledge is meant to empower you to make the best choice for you and your family 💜

You know how wine gets better with age? Well this happens to be true with my baking skills as well 😂

My morning glory muffins got a face lift! I swapped the coconut flour for oat flour, increased the cinnamon, and a few other minor changes and these muffins turned out better than ever! Full of flavor and moisture! I secretly want all my muffins to have oats in them while I’m breastfeeding,!but also oat flour just has a better texture and isn’t as dry.

Now, please enlighten me: are you a muffin, scone, or donut person? Muffins and scones are tied in my book; I would likely pass on any donut offered to me 😳

The recipe for these muffins will be linked in my profile page 👍🏻

Are you a soup person? Apparently some people (cough…my husband) would prefer not to eat soup. This still baffles me, as I LOVE a big bowl of soup on a chilly day. 🍲

Over the years I’ve crafted my favorite soups just to my likings. Most are found under the lunch tab on my website. Pictured here is my Chicken Detox Soup and it’s perfect for a rainy day or if you’re battling a cold. Some other favorites are Curry Butternut Squash, Zuppa Toscana, and Turkey Cabbage. All of these are dairy and gluten-free too 🙌🏼

Now, please tell what your favorite soup is in the comments so I can start brainstorming my next soup creation!

NEW ✨ Tuna Noodle Casserole ✨

www.hitenutrition.com/tuna-noodle-casserole

I developed this recipe after making a similar recipe for a family I cook for weekly. It immediately brought me back to my childhood when my dad use to make this cheesy comfort food casserole. He often topped his with broken-up potato chips, but I prefer just cheese!

The best part is it can be made completely gluten free! I use elbow noodles and it turns out so good. I’ve also found a great flour company that uses heritage wheat that is more easily digested, check out 👍🏻 or use Gluten-free flour blend. The family I cook for is dairy-free and we’ve adopted a good way to make this dairy-free as well. Check out the recipe (linked in my profile) to learn how!

I’m a planning to make these Pumpkin Buckwheat Pancakes Sunday morning so I thought I’d share the recipe for all the other pumpkin lovers out there!

I’m definitely a pancake over waffle kind of girl and I’m definitely pumpkin over apple when it comes to fall flavors. What are your picks?

These pancakes are naturally gluten and dairy-free. Dispute the name ‘buckwheat’ flour is naturally gluten-free that comes from a plant similar to rhubarb.

Easy Nacho Platter!

We make this every few months and it’s an easy, yummy meal that everyone loves! The best part is you can literally top it with whatever you have on hand! We usually do shredded chicken but you could do ground beef as well.

Here’s how I typically make the shredded Mexican chicken:

1. Add 1 lb chicken breasts to the Instant Pot along with 1/4 cup salsa if choice
2. Top with:
* 1/2 tsp garlic powder
* 1/2 tsp cumin
* 1/4 tsp paprika
* 1/4 tsp onion powder
* 1/4 tsp sea salt
* 1/4 tsp chipotle powder (optional)
3. Place lid on pot and set to poultry mode, 15 minutes.
4. Once done, manually release pressure using a towel to prevent steam from spraying everywhere.
5. Shred chicken using 2 girls or a mixer. Stir in the juices from the pot.

To assemble and bake the nachos:

1. Preheat oven to 400 degrees.
2. Layer a large baking sheet or pizza pan with a solids layer of tortilla chips.
3. Layer with cheese.
4. Layer with your favorite toppings. I like black beans, red onion, tomatoes, and shredded chicken.
5. Layer with more chips (slightly less than the first layer.
6. Layer with cheese and additional toppings again.
7. Bake for roughly 15 minutes.

That’s it! So easy and tasty 😋

Please tag me if you decide to make this; I love seeing you all make my recipes!
