I often think to myself that we’ve made healthy eating far more complicated than it needs to be. With the growth of the wellness industry and health influencers, healthy lifestyles have become a commodity to be bought and sold. There’s a lot of money is selling hope and an easier way…and supplements! And where there’s money to be made, there are creative forces who want to separate you from your wallet. (Too cynical?)

The reality is that health eating is pretty simple and the evidence is overwhelming for what I’m about to tell you…

What’s cooking in my kitchen? This super filling vegetable hash with steamed eggs and spices! This isn’t shakshuka, but it’s inspired by that flavorful middle eastern dish!

One of the things I’m regularly telling my patients that they need to eat more at breakfast. Not only that, but it’s a great opportunity to eat vegetables. Most people don’t think of vegetables as breakfast food, but they can totally fit! You just have to be a little bit thoughtful, and maybe think outside the box. In this case, I sautéed a shallot, yellow squash, eggplant, cherry tomatoes, and finally chopped cabbage together, then added garlic and cumin, and Garam masala. Near the end, I made little depressions amongst the veg and added the eggs along with about a quarter of a cup of water. I covered the pan to allow the eggs to steam. This is breakfast for two days, supporting one of my other tips, which is cook once eat twice!

This could definitely be done in a more traditional shakshuka way, using mostly tomatoes, onions and peppers and lots of spices. Or you could use mushrooms and spinach with a sprinkle of feta. Get creative and use whatever vegetables you have on hand. Even frozen vegetables could work here.

At the end of the day, this concept becomes a flexible. plant forward way to eat your veggies. I enjoyed mine with an English muffin and decide a fresh cherries.❤️

It’s almost Saturday! You know what that means, I’ll be at the Marietta Square Farmers Market doing my shopping. No cooking demo this week, but I’ll be back on site soon with more inspiration. You can still get last week’s recipes on my website at Dietitiansherry.com.

This is some of the BEST time of the year to shop local because you’re getting the most abundance, the most variety, and the most colorful options. Be sure to go to your local farmers market and support growers in your area! What are you most excited about buying at the market this weekend?

Many years ago, someone shared this comment with me, “Your life is worthy of your attention.” I was in a pretty difficult place in my life and struggling to take the next steps. My focus was all over the place, but not at all on myself. Yet, I couldn’t get her words out of my mind. The simple concept that I could be worthy of my attention, that my life mattered, was revolutionary. At least that’s the way it felt in the moment. For some of you, this is obvious. But when you feel like you’re suffocating, it can be hard to remember that you have to put on your own mask first.

If this resonates with you, I want to encourage you to take one small step toward self-care today. Your life really is worthy of your attention! Maybe you need to go to bed early so you can get enough sleep. Cook a simple nutritious meal for yourself. Practice mindful breathing.

You don’t need more time to practice some of these. You just need intention. A shift in focus to recognize your own needs as valid, important, worthy of your attention.

Save this as a reminder to your future self and send it to a friend who will also benefit from this wise quote.
