π₯ Fresh Power Quinoa Chicken Salad
A simple, nutrient-packed meal perfect for busy days, meal prep, and feeling your best from the inside out.
π₯¬ Ingredients:
3 cups baby spinach
3 cups cooked quinoa
24 oz cooked chicken breast, cubed
1 red bell pepper, diced
Β½ medium red onion, diced
1 large cucumber, diced
ΒΎ cup Kalamata olives, sliced
π« Dressing:
4 tbsp olive oil
4 tbsp balsamic vinegar
β¨ Optional topping:
Sprinkle of feta cheese (add just before serving)

Mix all ingredients from Step 1 in a large bowl.
Whisk together olive oil and balsamic vinegar to make the dressing.
Pour dressing over salad and mix well.
Top with feta if desired.
Store in the refrigerator for easy meals over a few days.
