Originally from Phoenix, Arizona, Dr. Lacy moved to the Dallas/Ft. Worth area in 2009 to study nursing and received a position at Baylor in radiology. While exploring that avenue of medicine, she realized she was not able to interact with patients in a way for her to really be a benefit for them. Discussing this with a friend of hers, chiropractic care was introduced to Dr. Lacy. After some resear

ch and soul searching, she decided to attend Parker University where she received her Chiropractic degree. After receiving her degree and with four months of clinicals under her belt at Parker University, Dr. Lacy was privileged to intern under the skill and knowledge of Elevation Health doctor, Jimmy Labrecque, D.C., in North Richland Hills. Dr. Lacy now works out of her own Elevation Health office, serving the community of Arlington, Texas. Her love and passion for chiropractic care shines through in her interactions with her patients. No Bake Cranberry Coconut Bites are a healthy snack option you can take on the go and don't have to worry about it being at room temperature.

This snack is packed with protein and made with 7 simple ingredients!

These snacks are vegan, gluten free, and dairy free.

Ingredients:

¾ cup natural, unsalted almond butter*
¼ cup pure maple syrup
½ cup dried cranberries, chopped
¼ cup walnuts, finely chopped
¼ cup ground flaxseed
½ cup gluten-free rolled oats
1 cup unsweetened coconut shreds or flakes

Directions:
1. In a large bowl, mix together all of the dry ingredients: cranberries, walnuts, oats, coconut and flax.

2. Add almond butter and maple syrup. Using a sturdy spatula, stir and fold together until well incorporated.

3.Scoop mixture into your hands (mine are 2 tablespoons each). Roll and press into bites. If the mixture is too dry, add in a bit more almond butter or maple syrup. If the mixture is too wet, add in a bit more coconut or oats. You want a slightly sticky dough texture.

Sometimes the most embarrassing topics and TMI stories are what lead us into realizing their are solutions to the very issues we are facing.⁠

Things like:⁠

-"It's seems like we will never get pregnant and I feel like something is wrong with me." (Could be Fertility Problems)⁠

- " I have gained so much weight around my stomach and I have been missing my periods." (Could be PCOS)⁠

-" I have a super heavy flow." (Could be Fibroids)⁠

- " I have the worst headaches and my bloating is so severe, I can't even button my pants." (Could be PMS )⁠

Avocados may be high in fat, but they have the essential healthy fats we should consume daily.

Avocados are also high in fiber, rich in vitamins B, E, and K.

Avocados have “60 percent more potassium than bananas.”

Here is an easy guacamole recipe just made with a few simple ingredients:

Avocados: Avocado flesh from ripe medium Haas avocados
Lime: Juice one lime
Red Onion: Mince a third cup of red onion
Garlic: Mash one small garlic clove
Cilantro: If you don’t like cilantro, omit it
Salt and Pepper to taste
Tomato and Jalapeño: You can add it if you desire.

Make sure you mash avocado leaving chunks. This will help for the overall consistency of the guacamole.

Add all ingredients together and you have yourself a healthy snack.

I love to put on bakery sourdough bread or eat with grain free chips.

Moderation is key when eating foods like this, but they can still be a healthier choice!

We are halfway through the week and I am sure we can all use some healthier lunch/dinner options to get us through the week.

Easy Spaghetti Squash Recipe:

1. Cut Spaghetti Squash in half and scoop out the seeds.
2.Lightly drizzle the insides lightly with olive oil and sprinkle with salt and pepper.
3. Poke a few holes in the skin of Spaghetti Squash and place it cut side down on a baking sheet. Cook at 400 F
4. Cook for 30-40 min. ( You can adjust accordingly depending on the size of your Squash)
5. Once it is cooked enough, use a fork to scrape the strands. I like to start from the outside and work my way to the inside.
6. Lastly, I like to add some marinara or meat sauce to mine for an alternative to using spaghetti noodles.

This is so easy and a healthy alternative even your kids will love!

Are you constantly feeling run down and can't seem to find those extra steps to make it through the day?⁠

This made me happy because its super easy to make.

Do you want to know why?

I keep healthy pre-made ingredients on hand to make this a 10 minute lunch.

The ingredients I used to make this dish were pre-made lentils and pico de gallo, cilantro (added some extra cilantro because I love it.), wild caught salmon quickly marinated with a bit of dried spices, coconut aminos and Worcestershire sauce.

I cooked it on a hot cast iron skillet with avocado oil and herb butter. It was delicious, super healthy and easy peasy!

I also was able to save the other half of salmon to use for another meal. I will probably use it on a salad for lunch tomorrow.
