INGREDIENTS:

🌽 1 can of Corn (rinsed and drained)
🫘 1 can of Black beans (rinsed and drained)
🫘 1 can of Black-eyed peas or Pinto Beans (rinsed and drained)
🍅 3 Roma tomatoes (diced)
🫑 1 c. Bell pepper (diced)
🧅 3/4 c. Red onion (diced)
🌿 3/4 of cilantro (chopped)
🌶️ 2 Jalapeño (minced)—optional

THE DRESSING:

🫒 1/3 c. of Olive oil
🍋 2 tbsp. Fresh lime juice
🍇 2 tbsp. Red wine vinegar
🍯 1 tsp. Honey or maple syrup
🧄 1 Clove of garlic
🧂 1-2 tsp. of Salt
🧂 1/4 tsp. of Black pepper
🌿 1 tsp. of Cumin
INSTRUCTIONS:

1. Prep the Veggies: Dice all veggies and toss them into a large mixing bowl with the rinsed beans and corn.

2. Whisk the Dressing: In a separate small bowl, whisk together the dressing ingredients.

3. Toss & Combine: Pour the dressing over the mix and toss gently.
Chill: Cover and refrigerate for at least 30 minutes to let the flavors marinate. Serve with baked tortilla chips, over grilled chicken, or as a side salad!
