🌿 Fibermaxxing: What’s the Trend All About?

You may have seen “fibermaxxing” trending on social media. Simply put, it means intentionally increasing the amount of fiber you eat each day. While the trend may be new, the importance of getting enough fiber isn’t. A good goal is about 28 grams of fiber each day.

There are two important things to remember when increasing fiber.
1️⃣ Increase your fiber gradually.
If your current intake is low, don’t jump straight to 28 grams overnight. Instead, increase your daily fiber by about 5 grams each week.
Why? Your digestive system needs time to adjust. Increasing fiber too quickly can lead to gas, bloating, cramping, and discomfort.

2️⃣ Drink enough water. 💧
Fiber absorbs water and adds bulk to your stool. Without enough fluid, suddenly increasing your fiber intake can actually make constipation worse. Drinking enough water helps fiber do its job and supports healthy, comfortable digestion.

The main point: When increasing your fiber intake, think gradual, consistent, and well-hydrated rather than simply trying to eat as much fiber as possible.

Zucchini & Yellow Split Peas Fritters

Crispy on the outside, tender on the inside! ✨ These Zucchini & Yellow Split Pea Fritters are packed with fiber, protein, and fresh flavor. Pair them with a simple lemony Greek yogurt dip for a satisfying lunch, snack, or light dinner.

Ingredients:
1 cup Yellow Split Peas (uncooked, rinsed)
1 Zucchini (large, grated)
1 Egg
1 Garlic (clove, minced)
2 tbsps Cilantro (chopped)
1/2 Lemon (zested, juiced)
Sea Salt & Black Pepper (to taste)
1/8 oz Avocado Oil Spray
1/2 cup Plain Greek Yogurt

Directions:
1. Add the split peas to a pot and cover with water. Place the pot on the stove and bring to a simmer over medium-low heat. Simmer for 45 to 50 minutes until soft and cooked through. Strain and rinse under cold water.
2. Transfer to a food processor and blend for 30 seconds until a paste forms. It's okay if some small chunks remain.
3. Meanwhile, preheat the oven to 400˚ F. Line a baking sheet with parchment
paper.
4. In a bowl, add the zucchini and squeeze it by hand or with a cloth to remove any excess water. Add the split peas, egg, garlic, cilantro, lemon zest, salt, and pepper. Mix well.
5. Using a tablespoon, form the mixture into small logs. Place on the prepared baking sheet and spray generously with oil. Bake for 20 to 25 minutes until cooked through and slightly golden.
6. In a bowl, whisk together the yogurt and lemon juice. Season with salt. Serve the fritters with the lemony yogurt. Enjoy!
