Interesting information on how celiac was first discovered. May is Celiac Awareness Month. We will post more information and resources.

During World War II, something unexpected was happening in a Dutch children's hospital. As food — especially bread and flour — ran scarce, pediatrician Willem Dicke noticed that the children he was treating for a mysterious digestive illness were actually improving.

That observation would eventually lead to identifying gluten as the cause of what we now call celiac disease, transforming how we understand and treat it. A doctor paying close attention changed everything.
