Some meetings happen in a boardroom, but I prefer when they happen over snacks. 😄 Enjoyed catching up with Steve Weiss, CEO of Snakkidz, to film fresh, practical nutrition content for parents. As a dietitian (and mom of three), my favorite conversations are the ones that turn everyday feeding challenges into realistic, evidence-based tips families can actually use. One of my favorite parts of speaking is hearing how other dietitians approach real-world nutrition counseling. The case study conversations were thoughtful, engaging, and a great reminder that translating nutrition science into practical, personalized guidance is where we can make the biggest impact.

One of my favorite make-ahead snacks as a dietitian and mom of three! 🙌

These no-bake energy bars come together in about 10 minutes and are perfect for lunchboxes, afternoon snacks, busy mornings, or a quick bite before activities.

No-Bake Peanut Butter Oat Energy Bars
Ingredients:
• 2 cups old-fashioned rolled oats
• ¾ cup natural peanut butter
• ⅓ cup honey
• ½ milk
• 1 scoop vanilla protein powder (optional)
• 2 tablespoons ground flaxseed
• 1 teaspoon vanilla extract
• ¼ teaspoon cinnamon
• ¼ cup mini dark chocolate chips

Directions:
1. Stir together the peanut butter, honey, Greek yogurt and vanilla.
2. Mix in oats, protein powder (if using), flaxseed and cinnamon.
3. Fold in chocolate chips.
4. Press into a parchment-lined 8x8 pan. (Optional: Drizzle melted chocolate)
5. Refrigerate for at least 1 hour before slicing into bars.

💡 Dietitian Mom Tip: Instead of focusing on "perfect" snacks, I like building snacks with staying power. A combination of protein, fiber and healthy fats can help keep everyone satisfied between meals—whether it's after school, before sports practice or during a busy workday.
