Hey friends, let's bust one of the biggest nutrition myths still alive today: Saturated fat is NOT your enemy, and having higher cholesterol — especially as you get older — is often linked to living longer, not dying sooner. Time to rethink what we've been told for decades. 🧈🥑🍳🍖
For 50+ years, mainstream advice screamed that saturated fat clogs your arteries and raises cholesterol, so we should all switch to low-fat everything. But modern evidence paints a very different picture. Multiple large meta-analyses of randomized controlled trials and observational studies have found no significant link between saturated fat intake and increased risk of heart disease, cardiovascular deaths, or overall mortality.
Replacing saturated fats with refined carbohydrates (white bread, sugary snacks, processed foods) doesn't improve outcomes and may make metabolic health worse. Swapping for polyunsaturated fats or whole-food sources can help in some contexts, but saturated fat itself isn't the villain it was made out to be.
Saturated fats from butter, coconut oil, tallow, full-fat dairy, eggs, and meat are stable for cooking (they don't oxidize easily like some seed oils), crucial for hormone production, brain health, cell membranes, and absorbing vitamins A, D, E, and K. Human breast milk is naturally high in saturated fat for a reason — it's nourishing!
These foods often raise HDL ("good" cholesterol), improve triglycerides, and can lead to larger, less harmful LDL particles. Some studies even link higher full-fat dairy consumption to lower risks of obesity, diabetes, and cardiovascular issues.
Now the cholesterol paradox: In many populations — especially people over 60, 70, 80, and beyond — higher total and LDL cholesterol levels are associated with longer lifespan, not shorter.
Research on the elderly, centenarians, and Blue Zones shows that low cholesterol often signals frailty, chronic inflammation, malnutrition, cancer, or other underlying problems. Very low levels (< ~130-160 mg/dL total in some studies) correlate with higher all-cause mortality. U-shaped risk curves are common: both extremely high and very low cholesterol can be problematic, but in older adults, moderately high levels frequently predict better survival.
This has been observed in large cohorts, nursing home studies, and reviews of the oldest-old. For healthy or metabolically sound individuals, obsessively lowering cholesterol with diet or meds may not extend life and can sometimes backfire.
Of course, context is everything: genetics (like ApoE variants), overall diet quality, carb intake, exercise, sleep, stress, and avoiding ultra-processed junk matter far more than hitting arbitrary cholesterol targets. A low-carb or ketogenic approach rich in saturated fats often improves blood markers dramatically for many people.
Always consult your healthcare provider, especially if you have existing heart disease or take medications. But the old low-fat, low-cholesterol dogma was built on weak early research, selective data, and industry influence. It hasn't held up well under rigorous modern scrutiny.
Focus on real, nutrient-dense foods: pasture-raised eggs, grass-fed meat, butter/ghee, olive oil, avocados, fatty fish, nuts, and plenty of vegetables. Ditch the fear, embrace quality animal and plant fats, and listen to how your body feels.
