When you think of salad what comes to mind? I used to associate salad with feeling hungry and deprived, until I started looking at salad (and all meals) as a way to get the most nutrients, instead of the least amount of calories.
When making a salad, focus on getting an abundance of different types + colors of veggies. Why? Different vegetables provide a variety of vitamins, minerals, flavonoids, and the more plants you include in your diet, the better your overall health will be.
For protein, choose nourishing plant-based proteins like beans, tempeh, tofu, + edamame which promote gut health and contain antioxidants, unlike animal proteins.
For an extra boost, add fermented foods, like sauerkraut, kimchi, or other pickled veggies which function as a pro-biotic to all the pre-biotic (fibrous veggies) on your plate (more on that in a future post!)
