Yield: 8 servings, 4 points per serving for blue and purple, 5 points per serving for green.

Ingredients

1 10 1/2 oz. can of Healthy Request Cream of Chicken condensed soup

1 cup fat-free sour cream

1/2 cup reduced-fat Mexican cheese, shredded

5 biscuits (I used Kroger jumbo junior biscuits. If you do not have the same biscuits double check the points. You only need 6 oz. of biscuit dough. )

2 cups cooked chicken breast, shredded

1 cup frozen vegetables (I used carrots, peas and corn)

1/8 teaspoon garlic powder

salt and pepper, to taste

Instructions

Preheat oven to 350 degrees F.

In a large mixing bowl add the soup, sour cream and cheese, stir together. Add the chicken, vegetables and garlic powder and stir again.

Cut each biscuit into 8 pieces, then add them to the soup mixture and stir.

Spray a casserole dish with no-stick cooking spray, then add the soup mixture.

Bake 35 minutes. Enjoy!

INGREDIENTS:
4 boneless, skinless chicken breasts, cubed
1/2 Tbsp cornstarch
1 Tbsp soy sauce
3 Tbsp peanut oil
1 green bell pepper, sliced
4 mushrooms, sliced
1/2 lb snow peas, cut in half
1/2 c cashews
1/4 tsp ground ginger
1/4 tsp cayenne pepper
SAUCE INGREDIENTS:
6 Tbsp soy sauce
3 Tbsp white wine
1/2 Tbsp cider vinegar
3 Tbsp brown sugar
1 Tbsp cornstarch
1 Tbsp oil
DIRECTIONS:
1. In a large bowl combine chicken with cornstarch and soy sauce, stir well and let sit at least 5 minutes.

2. Clean, cut and prepare all ingredients ahead of time, including sauce mixture.

3. In a large frying pan or wok over medium-high heat, heat oil, add chicken and quickly stir-fry until done, 2-3 minutes.

4. Remove chicken from pan and set aside on a plate.Advertisements

5. Add sliced green pepper and mushrooms to pan and stir-fry 2 minutes.

6. Add pea pods and nuts, stir fry 2 more minutes and add ginger and cayenne.

7. Return chicken to pan with vegetables, add sauce and stir.

8. Cover skillet and cook 5 minutes over medium heat. Serve over boiled white rice.

W/W Red, White and Blue Cheesecake Salad is the perfect dish for patriotic holidays like Memorial Day and 4th of July.

Ingredients
8 ounce fat free cream cheese–softened
1 ounce package sugar-free cheesecake flavored pudding mix
1 cup fat-free French vanilla creamer
1 pound strawberries–cut into small chunks or slices
2 6 ounce containers blueberries
4 large bananas
Juice of one lemon
Instructions
Get a medium bowl and add the softened cream cheese. Use a hand mixer or a stand mixer (my favorite, LOL) and whip the cream cheese until it is silky smooth. No worries if it starts to bind up in the beaters….just keep mixing and it will loosen up eventually.
Once the cream cheese is smooth then add the dry pudding mix and beat it until these are well combined.
Now it is time to add in the creamer. Turn the mixer to low and add the creamer SLOWLY. I like to do about a tablespoon at a time and mix it well…till the mixture is smooth before adding another tablespoon. It is a pain to do it so slowly, but it will result in a smoother, prettier mixture! Keep at it until you have added all of the creamer and the mixture is whipped smooth.
Stick this mixture into the refrigerator for now.
Now grab your fruit and peel and slice the bananas into a bowl. Pour the lemon juice over the bananas and stir them around so they are nicely coated. Pour any extra lemon juice out of the bowl.
Slice the strawberries or cut them into small chunks…your preference.
Add the strawberries and blueberries and stir the fruit around.
Grab the cheesecake mixture and fold it gently into the fruit.
Keep this delicious salad refrigerated until ready to serve.
Recipe Notes

This made about 8 cups for me. Be sure to figure the recipe based on how much you get because fruit does vary in size a lot. If you do 1 cup servings then it is 4 points per serving on all 3 myW/W Plans–green, blue and purple. You could also do 1/2 cup servings for 2 points.

On the current W-W Program (2023), it is 5 points per serving. The serving size is one cup.

Thank you ❤️❤️❤️ Must express something to keep getting my recipes Oh wow! This soup was a huge hit with my family. We made this soup exactly as the recipe is written. It was quick, easy, and so delicious! It has so much flavor and is light. My dad was over for dinner and asked me for the recipe. This is now most definitely in our rotation. I’m happy we found it.
1 pound extra-lean ground turkey
1 medium yellow onion peeled and diced
1 ounce taco seasoning (1 packet)
1 ounce ranch seasoning mix (1 packet)
15 ounces canned black beans rinsed and drained
15 ounces canned red kidney beans rinsed and drained
15 ounces canned corn drained
15 ounces canned petite diced tomatoes
10 ounces Rotel tomatoes and green chilies
14.5 ounces chicken broth
Instructions
In a large pot, cook the ground turkey and onion until the turkey is cooked through and browned, breaking up the meat as it cooks. Stir in taco seasoning and ranch mix.
Add the black beans, kidney beans, corn, diced tomatoes, Rotel, and chicken broth to the pot. Stir everything together, cover the pot, and simmer for 20 minutes, stirring occasionally.
Stir once more before serving warm. Garnish with chopped parsley or cilantro is desired.

Refrigerate any leftovers in an airtight container for up to 3 days. You can also freeze this soup in individual servings.

INSTRUCTIONS
Pre-heat the oven to 350. Lightly mist a 24 count mini muffin tin with cooking spray.
In a large bowl, stir together flour, baking powder, Italian seasoning, salt and red pepper. Add the milk and egg and whisk together to thoroughly combine. Add the mozzarella, Parmesan and pepperoni and stir until combined.
Divide the batter evenly amongst the prepared mini muffin tin cups. Bake in the oven for 18-22 minutes until golden. Serve with warm pizza sauce for dipping.

Ingredients:
1 lb lean ground turkey or chicken1 cup onion, diced1 cup green bell pepper, diced1 cup red bell pepper, diced2 cloves garlic, minced1 can (14 oz) diced tomatoes, undrained1 can (15 oz) tomato sauce1 can (14 oz) beef broth (use low-sodium for a healthier option)1 cup cooked brown rice (or quinoa for a different grain option)1 teaspoon dried basil1 teaspoon dried oregano1/2 teaspoon salt1/4 teaspoon black pepper1/4 teaspoon crushed red pepper flakes (optional for added heat)Fresh parsley, chopped, for garnish (optional)Reduced-fat shredded cheese for topping (optional)Instructions:In a large soup pot or Dutch oven, cook the ground turkey or chicken over medium heat until browned. -Kraft Mozzarella low moisture/part skim reduced fat cheese-1/4 cup 3 points (worth it 😉)

1 can rinsed kidney beans
1 can rinsed black beans
1 can drained tomatoes with green chili
1 bag steamed corn
1 chopped bell pepper
2 chopped green onions
Chopped cilantro
Dressing: juice from tomatoes, 2 limes, pinch of sweetener (I use monkfruit for no points), garlic, tajin to taste, apple cider vinigar for zip)
Toss, refrigerate if you can wait, nosh with a crispy something! I used off the eaten path veggie crisps

Ingredients for Weight Watchers Egg Roll in a bowl

1.5 lbs Lean ground turkey 99% fat-free

¼ c. water

3 c. green cabbage, shredded

1 medium carrot, shredded

½ tsp garlic powder or fresh minced garlic

2 tbsp toasted sesame oil

½ tbsp. fresh ginger, finely minced

2 tbsp. green onions, chopped

1 tbsp. rice vinegar

Sea salt and black pepper, to taste

Optional: 2 tbsp. coconut aminos or tamari, hoisin sauce, sesame seeds

How to Make Weight Watchers Egg Roll in a bowl

Heat a large skillet over medium-high heat. Brown turkey until no longer pink, then drain if needed
Add water. Reduce heat to medium and add shredded cabbage, carrots, garlic powder, sesame oil, ginger, and green onions.
Season with salt and black pepper, to taste and cook, stirring frequently, until the cabbage and carrots are soft, approximately 4-5 minutes.
Add rice vinegar. Cook another 1-2 minutes or until heated through. Remove from heat and transfer to a serving platter or bowl. Sprinkle with sesame seeds, if using, and serve immediately. Enjoy!
