Trying out the viral Beanut Butter recipe with my favorite natural sweetener, Natural Delights Medjool Dates!

This “peanut butter” made with beans and peanut powder is lower in fat and calories, but higher in fiber than typical peanut butter. Perfect for all my peanut butter lovers who feel 2 tbsp is simply not enough!

Macro breakdown:
Per ⅓ cup Beanut Butter: 150 calories, 1g fat, 5g fiber, 7g protein
VS.
Per 2 TBSP Peanut Butter: 190 calories, 16g fat, 3g fiber, 8g protein

Recipe:
Ingredients:
1 cup Great Northern Beans, rinsed
¼ cup powdered peanut butter
4 Natural Delights Medjool Dates, whole, pits removed
1 tsp vanilla extract
Pinch of sea salt
4 TBSP warm water, plus more as needed

Directions
To a small bowl, add 4 Natural Delights Medjool Dates (pits removed), and cover with very hot water. Let sit for about 10 minutes until dates are very soft.
To a small blender or food processor, add Great Northern Beans, soaked dates, ¼ cup powdered peanuts, 1 teaspoon of vanilla, a generous pinch of salt, and ¼ cup warm water.
Blend until completely smooth. You may need to scrape down the sides a few times. You may also add more water by the tablespoon if you like a thinner consistency.
Enjoy how you would peanut butter!

Happy October!! Bringing this one back from last year because it’s still one of my favorite pumpkin recipes I’ve ever made 🎃🍫🫘

Pumpkin Spice Latte Date Bark

Ingredients:
½ cup pumpkin puree
1 tsp pumpkin pie spice
1 tsp vanilla extract
¼ cup almond butter
11-12 Natural Delights Medjool Dates
½ cup chocolate chips
½ tbsp espresso/coffee powder
1-2 tbsp pumpkin seeds
1 tbsp crushed coffee beans
Sprinkle of flaky sea salt

Instructions:
To a skillet over medium heat, add pumpkin puree, pumpkin pie spice, and vanilla extract. Mix until well combined and most of water has cooked out of pumpkin, about 4-5 minutes.
In a small bowl, mix the pumpkin with almond butter and place in the fridge to cool.
Meanwhile, place your Natural Delights Medjool dates on a sheet of parchment paper in a single layer. Cover with another sheet of parchment and use a rolling pin to flatten them into an even layer. Remove the top sheet and set aside.
Spread the pumpkin mixture evenly over the flattened dates. Place it in the freezer to harden.
In a small, microwave-safe bowl, melt chocolate chips, then stir in the espresso powder. Mix until well combined.
Pour the melted chocolate on top of the pumpkin and dates, and smooth into an even layer.
Sprinkle with pumpkin seeds, crushed coffee beans, and flaky sea salt.
Place in the refrigerator until set, at least an hour.
Once firm, remove the bottom layer of parchment paper, and cut into small pieces. Enjoy!
