We built the Sakara Nutrition Program so you wouldn’t have to investigate every meal yourself.

Because “food as medicine” should mean more than a wellness claim. It should be reflected in every decision: how ingredients are sourced, which standards they meet, how intentionally each plate is composed, and whether the food brings enough pleasure to become a ritual.

That is why we seek high-quality ingredients with purity, integrity, and purpose, opting for organic and local produce whenever possible. Why every meal is plant-based, gluten-free, dairy-free, non-GMO, and made without refined sugars or artificial colors and flavors. Why our chefs and nutritionists design each weekly menu with colorful produce, plant protein, healthy fats, fiber-rich ingredients, and a diversity of plants.

And why nourishment at Sakara never comes at the expense of desire. Every meal is made to be vibrant, sensorial, and deeply satisfying–food you look forward to eating and feel good returning to.

This week’s Sunday Table is made for grazing. A rainbow of summer vegetables and two dips worth double-dipping, no cooking required.

Summer Spread with Green Goddess Cashew & Roasted Beet Hummus

For the spread:
 Rainbow carrots
 Cherry tomatoes
 Cucumber
 Snap peas
 Red radish
 Cubanelle pepper
 Golden beets
 Slice everything into dippable pieces and arrange on a platter.

Green Goddess Cashew:
 1 cup raw cashews, soaked in hot water 20–30 minutes and drained
 ¼ cup fresh basil
 ¼ cup parsley
 2 tbsp chives
 1 garlic clove
 Juice of 1 lemon
 2 tbsp olive oil
 4 tbsp water, plus more as needed
 1 tbsp nutritional yeast
 ½ tsp salt
 ¼ tsp black pepper
 Blend everything until smooth and creamy, adding water a tablespoon at a time until it pours the way you like. Taste and adjust with more lemon or salt.

Roasted Beet Hummus:
 1 medium roasted beet, peeled and chopped
 1 (15 oz) can chickpeas, drained and rinsed
 ¼ cup tahini
 Juice of 1 lemon
 1 garlic clove
 2 tbsp olive oil
 ½ tsp ground cumin
 ½ tsp salt
 2–4 tbsp ice water, as needed
Blend the beet, chickpeas, tahini, lemon, garlic, olive oil, cumin, and salt until mostly smooth. With the processor running, add ice water a tablespoon at a time until light and fluffy. Taste and adjust, then finish with a drizzle of olive oil.

Arrange it all on one platter, serve, and enjoy.
