👩‍🍳How to Make North Carolina Spiced Sweetpotato Burger Bowls 👩‍🍳
✅2
✅Ground beef
✅Mushrooms
✅Spices
✅Burger toppings

👉🏻Sweetpotatoes: preheat oven to 400. Peel 2 sweetpotatoes and slice into thick rounds, toss with 2 tbsp olive oil, ½ tsp each of smoked paprika, and garlic powder, pinch of cayenne, salt, and turbinado sugar. Roast for 20 minutes or until tender, flip half way through cooking.

👉🏻Ground beef + Mushrooms: Brown ground beef in a large skillet, season well with salt and black pepper. Wipe pan clean, add a bit of olive oil and cook mushrooms until browned. Sseason with salt and pepper.

👉🏻Insanely Delicious Burger Sauce: Combine crushed garlic, mayo, dijon, ketchup, pickle juice, and diced pickles. Stir well to combine.

👉🏻Assemble: If feeding a family set up a burger bowl station and allow everyone to make their ideal burger bowl. Recommended bowl: Shred lettuce and add to bowl. Top with ground beef, mushroom, sweetpotato, tomato, avocado, red onion, pickles, and top with burger sauce.

🌶️ WHOLE CHICKEN SOUP - IN THE INSTANT POT! 🌶️

👉Ok so this is a Thai chicken noodle soup version, but if those flavors don’t get you going, pay attention to the method, rather than the flavors.

✅Place whole chicken (I like smaller 3-4 lb whole birds) + aromatics (options: garlic, onion, celery, carrot, ginger, parsley or cilantro, chilis,) + salt and pepper (whole pepper corns) Fill with water to just under the full line in the instant pot.

✅Manual for 25 minutes, allow to manually release for 10 minutes.

✅Remove chicken from pot, and strain broth.

🌶️BONUS: You can use the delicious nutrient dense broth and yummy juicy shredded chicken in so many ways.

🌶️🌶️EXTRA BONUS: Using a pressure cooker to make a quick broth is a great way for my MCAS folks to have a lower histamine broth option

I mean also… you don’t have to like cottage cheese that’s totally ok too. We don’t have to jump on the food trend of the moment - BUT…
Personally, I’ve always been a fan, it’s creamy and yummy, works in both savory and sweet situations, and is an excellent easy source of protein.
The protein in cottage cheese comes mostly from casein. Casein is a slow digesting protein, meaning it is absorbed by the body more gradually than other proteins like whey. Making casein a great choice for folks who want a sustained release of protein throughout the day.
As long as you tolerate casein (a whole other post)
But what difference does any of that make if you don’t like cottage cheese!!
