Spirulina Blueberry Italian Soda with Matcha Cold Foam
Ingredients:
▪️1 cup blueberries (fresh or frozen)
▪️2 tablespoons honey (for blueberry sauce)
▪️1 teaspoon lemon juice
▪️1 teaspoon green spirulina powder
▪️ 2 tablespoons water
▪️2 cups soda water, chilled
▪️½ cup heavy cream
▪️1 teaspoon matcha powder
▪️1 scoop Nutrafol Collagen Infusion
▪️1 teaspoon honey (for cold foam)
▪️1 pinch flaky sea salt
Steps:
1. Make the blueberry spirulina sauce: Add 1 cup blueberries, 2 tablespoons honey, 1 teaspoon lemon juice, and 2 tablespoons water to a small saucepan over medium heat. Cook, stirring occasionally and pressing the berries with the back of a spoon until the blueberries burst and the mixture thickens slightly into a loose sauce.
2. Add spirulina to sauce: Remove the saucepan from heat and stir in 1 teaspoon green spirulina powder until fully combined. The sauce will turn a gorgeous deep blue-green. Let it cool completely before assembling.
3. Make the matcha collagen cold foam: In a small bowl or jar, whisk together ½ cup heavy cream, 1 teaspoon matcha powder, 1 scoop Nutrafol Collagen Infusion (1 scoop = 1 serving size), 1 teaspoon honey, and a pinch of flaky sea salt until the matcha is fully dissolved with no clumps. Froth using a milk frother, or shake vigorously in a sealed jar until thick and foamy.
4. Assemble the Italian soda: Spoon a few tablespoons of the cooled blueberry spirulina sauce into the bottom of each glass. Fill with ice, then slowly pour the chilled soda water over the ice, leaving about an inch of room at the top.
5. Top with cold foam & serve: Spoon the matcha collagen cold foam generously over the top. Serve immediately with a straw and enjoy the layers as you sip.
