Tonight’s 3.5 lb. Three-Bone Parilla Smoked Short Rib disappeared faster than we could have imagined.

Slow-smoked, finished over the fire, and served with a red wine sauce infused with Ceylon cinnamon, star anise & coriander, then finished with Sicilian pistachio and spearmint gremolata.

You asked for it. We cooked it. You cleaned us out.

Don’t worry — this is only the beginning. More special cuts, more fire, and more surprises are coming out of the Brasa kitchen.
