Between vacations, kids home from school, irregular schedules, and the heat making you not want to cook... it's a lot.

Sunday prep doesn't have to take all day. Yes, I know it's Thursday, but planning ahead will save tons of time!
These 5 summer vegetables take less than an hour to prep and will carry you through the whole week.
πŸ₯’ Zucchini - slice and roast with olive oil and garlic. Goes in everything!
πŸ… Cherry tomatoes - roast them low and slow until jammy-like texture. Life-changing on eggs, pasta, toast.
🌽 Corn - cut off the cob and store raw. Toss into salads, stir-fries, or quesadillas all week.
πŸ«‘ Bell peppers - slice and store raw for snacking, or roast for a sweet, smoky addition to any meal.
πŸ§… Red onion - quick pickle in vinegar, salt, and a pinch of sugar. Ready in 30 minutes, lasts all week.
Chef's tip: roast everything at 400Β°F on a sheet pan with olive oil, salt, and pepper. One pan, minimal cleanup, maximum flavor.

Myth: eating healthy in summer is expensive.
Fact: summer is actually the most affordable time to eat well.

Here's why:

βœ… Seasonal produce is at its lowest price point right now
βœ… Farmers markets often have end-of-day deals
βœ… Simple summer meals require fewer ingredients
βœ… Fresh herbs grow easily on a windowsill and cost pennies per use

As a registered dietitian and a chef, I always say: the best nutrition doesn't come from expensive supplements or specialty products. It comes from real, fresh, seasonal food - prepared with a little knowledge and a lot of love.

This salad is summer in a bowl - and it comes together in about 10 minutes.

Summer peach & arugula salad

What you need:
β€’ 2 ripe peaches, sliced
β€’ 3 cups fresh arugula
β€’ 1/4 cup crumbled goat cheese
β€’ 1/4 cup candied or toasted walnuts
β€’ Fresh basil leaves
β€’ Drizzle of good olive oil + a squeeze of lemon
β€’ Salt & cracked pepper to taste

Chef's tip: Don't skip the fresh basil. It bridges the sweetness of the peach and the peppery arugula in a way that makes this feel restaurant-worthy.

RDN note: Peaches are rich in vitamins A and C, and arugula is one of the most nutrient-dense greens you can eat. This isn't just delicious - it's genuinely good for you.

August is one of the most abundant months of the year - and eating with the season isn't just a trend, it's one of the simplest things you can do for your health and your wallet.

Seasonal produce is picked at peak ripeness, which means more flavor and more nutrients. Think juicy tomatoes, sweet corn, vibrant zucchini, peaches that actually taste like peaches.
