Please join us in welcoming Megan to the Kelbel Health family! 🧡🦬 Megan is joining our team as an administrative Chiropractic Assistant, and we couldn’t be more excited to have her on board. Originally from a small town outside of Rochester, Minnesota, Megan is currently pursuing a degree in Business Management at UW–La Crosse and brings a positive attitude, strong work ethic, and genuine passion for helping others.

Outside of work and school, Megan loves staying active and making the most of every season. You’ll often find her playing tennis with family and friends, enjoying a great cup of coffee, trying new sushi restaurants, traveling, or spending time with her family, boyfriend Isaiah, and her dog, Barkley. She’s already visited five countries and hopes to add many more to that list—especially Greece, which tops her dream travel destinations! Fun fact: her favorite color is light blue, her favorite flowers are hydrangeas and tulips, and if Mediterranean food is on the menu, she’s probably ordering it.

Megan loves new experiences, values meaningful connections, and brings a warm, friendly energy everywhere she goes. ✨ From “believing she’d never take a photo” to glowing confidence ✨

When Kelly first walked into Kelbel Health, she wasn’t sure this journey was for her. Referred by another amazing patient, she met with one of our passionate red light case managers, Z**i—who showed her our wall of wins filled with real healing stories.

Z**i looked at Kelly and said, “This is a spot for you and your story.”

Kelly smiled… but said she didn’t think she’d ever take a photo.

Fast forward just 3 months… and everything changed. 💫

🌸 Meet Brooke! 🌸

We are so excited to welcome Brooke as our newest Chiropractic Assistant at Kelbel Health!

Brooke is from the La Crosse area and has lived here most of her life. She’s the oldest sibling to one brother and is very close with her family. She’s also a huge animal lover and a big dog lover! 🐾

When she’s not at the office helping care for patients, you’ll likely find her enjoying the outdoors, spending time with friends, shopping, or heading to a country concert. One of her favorite traditions is going to Brewer games with her dad ⚾

Brooke will also be graduating with her Associate’s Degree in Digital Marketing this April and is excited to bring her skills and creativity to Kelbel Health!

We also had to share this sweet moment from Brooke’s first day — the beautiful flowers her grandma sent her! How special is that? 🌷

Our Team Favorite: 🥘 One Pan Chicken (Paleo + Gut Health Friendly!)

This is our go-to dinner for busy weeknights — easy, nourishing, kid-approved, and husband-approved 🙌 Plus, minimal cleanup!

Packed with fiber-rich veggies, quality protein, and anti-inflammatory herbs, this meal supports gut health while keeping things simple.

✨ Directions:

1️⃣ Heat oven to 425°F (220°C).

2️⃣ Cut vegetables. Place each in a separate corner of a baking pan lined with parchment paper.
NOTE: Broccoli and Brussels sprouts cook faster — keep the cuts thicker for those. Sweet potatoes and carrots take more time — dice them or cut them thinner.

3️⃣ Season veggies with avocado oil, sea salt, pepper, rosemary, thyme, and garlic.

4️⃣ Season both sides of the chicken with avocado oil, sea salt, pepper, and the remaining rosemary, thyme, and garlic over parchment paper. Seal parchment paper to keep chicken moist, and place on the center of the baking pan.

5️⃣ Bake for 25–30 minutes, until chicken is fully cooked and veggies are done to your liking.

💡 Meal Prep Tip:
This meal works great with wild rice, so feel free to add some to your meal prep as well. Unwrap and slice the chicken. Separate veggies into each container with chicken for an easy grab-and-go lunch or dinner.
