I’ve been making a lot of salads lately the warm weather just gets me inspired.�I love this one so much. Colorful, fresh, and full of real whole ingredients.�
Sweet peaches, tons of herbs, and the perfect crunch from pistachios.

Light but still satisfying with fiber, healthy fats, and ingredients that actually make you feel good.

Save this one and make it this week.

Tabbouleh Salad Ingredients:
¾ cup dry bulgur wheat 1 cup boiling water ½ teaspoon salt
½ cup fresh lemon juice
¼ cup olive oil
3 medium peaches, sliced into small bite-sized pieces
½ cup fresh mint chopped
1 cup fresh parsley, chopped
1 large cucumber, seeded and chopped ½ cup cherry tomatoes, chopped
½ cup Setton Farms Raw Pistachio Kernels, chopped
Honey to taste

Instructions:
Cook the Bulgur In a medium bowl, combine the bulgur wheat, boiling water, salt, and lemon juice. Cover and let sit for about 20 minutes, or until the bulgur is tender and the liquid is absorbed. Assemble the Salad In a large mixing bowl, combine the cooked bulgur with mint, parsley, cucumber, cherry tomatoes, peaches, and chopped Setton Farms Raw Pistachio Kernels. Dress and Finish Drizzle with olive oil and a touch of honey to taste. Season with salt. Toss gently to combine all ingredients evenly. Serve Enjoy chilled or at room temperature.
Perfect as a light lunch, side dish, or potluck favorite.

if you’ve been feeling off lately… this is probably why

you’re starting strong�then falling off a few days later
grabbing whatever is easy�snacking without thinking�telling yourself you’ll “be better tomorrow”

and with holidays coming up… it’s easy to just say - I’ll deal with it after

I see this all the time
it’s not that you don’t know what to do�it’s that nothing is sticking

so instead of starting over again�this is where I’d start

clean it up�keep it simple�stay consistent
even when life is busy�even with holidays
