Rainy Day Potato Soup
By Maggie

Ingredients
3 TBSP Grass-fed Butter
1 Medium Yellow Onion
6 Medium Yukon Gold Potatoes
1 Carton Chicken Broth or Broth of Choice
Fresh Thyme
Garlic Powder
Onion Powder
Smoked Paprika
Salt
Black Pepper
Optional
White Wine
Cooked Bacon
Green Onion or Chives
Sour cream

Instructions
Begin by dicing one medium yellow onion.
In a large pot, melt 3 TBSP of butter, then add the onion and sauté on low-medium heat until translucent (about 5-8 minutes). While this is cooking, chop your potatoes into roughly ½” cubes (don’t sweat the perfection).
When the onions are beginning to brown and the butter is lightening in colour, add your potatoes and stir to coat in butter. Add 2-3 stems of fresh thyme, 2 tsp. Smoked paprika, 1 TBSP. Garlic powder, 1 TBSP Onion powder, salt, and fresh cracked black pepper to taste. Optionally, you can add a splash of white wine at this step (I like to use sulfite free) and simmer for 2 minutes.
Cover potatoes with chicken broth (or broth of your choice) and bring to a boil on high heat. Cover potatoes and turn heat to low, cooking approx. 20 minutes or until soft.
When the potatoes have softened, remove the stems of thyme, add ½ cup half and half or heavy cream (or nondairy alternative) and blend about ¾ of the soup, leaving some potato chunks for texture if that’s your jam. I like to use an immersion blender but you can use a stand blender as well.
At this point you can add 1 cup of your favourite shredded cheese (I use a blend of Monterey Jack and grass-fed cheddar), stir to melt, and adjust the seasonings to your taste. You can top this soup with chives or green onions, chopped bacon, and even a little sour cream.

As summer winds down and fall begins to settle in, we naturally find ourselves moving back toward routines and rhythms. The slower mornings, longer days, travel, late nights, and spontaneous summer plans begin to shift, creating an opportunity to reconnect with the habits that help us feel our best.

The transition into fall is a wonderful time to replenish what may have been depleted over the summer, support hydration and nutritional balance, and prepare your body for the months ahead. Whether that means focusing on sleep and nutrition, supporting your immune system, getting back into regular movement, or exploring IV therapy for additional nutritional support, small steps now can help you enter the new season feeling grounded, energized, and resilient.

Fall doesn't have to mean an overhaul or a list of restrictions. Think of it as a reset without restriction—a chance to listen to what your body needs and re-establish the routines that support your energy, recovery, and overall well-being.

Here's to embracing the change of season, returning to our rhythms, and finding our Back to Balance as we move from summer into fall!

Late Summer offers a natural opportunity to return to simple, grounding habits. Supporting metabolic health does not require perfection or an extreme diet. Small choices, practiced consistently, can make a meaningful difference.
Balanced meals that include protein, fiber, healthy fats, and colorful vegetables may support steadier energy and greater satisfaction than eating carbohydrates by themselves.
Eating at regular intervals may also help. Skipping meals can leave some people feeling shaky, irritable, fatigued, or more likely to crave sugar later in the day. Regular meals can help the body feel adequately nourished and supported.
Late Summer is also a wonderful time to enjoy seasonal foods such as zucchini, tomatoes, cucumbers, green beans, blackberries, peaches, plums, melons, and summer squash.
Chinese dietary therapy often emphasizes warm, simply prepared foods when digestion feels weak. Even during warmer weather, some people feel better incorporating cooked vegetables, soups, rice, oats, squash, or other easy-to-digest meals rather than relying entirely on cold or raw foods.
A gentle 10 to 15 minute walk after eating can support digestion and healthy glucose
metabolism. Movement does not need to be strenuous to be beneficial.
Sleep and stress management also play an important role. Sleep deprivation and chronic stress can influence hunger, cravings, energy, and insulin sensitivity. Rest is not separate from metabolic health. It is part of the treatment.

Late Summer reminds us that nourishment is not simply about what we eat. It is also about how we rest, how we manage stress, and whether our daily routines provide enough stability for the body to function well.
At Amber Wellness Group, we provide compassionate, individualized care for women through every stage of life. Whether you are navigating PCOS, insulin resistance, prediabetes, menstrual changes, fertility concerns, perimenopause, menopause, or unexplained fluctuations in energy, acupuncture may be a valuable part of a comprehensive wellness plan.

Why Wildfire Smoke Affects the Body

Wildfire smoke contains gases and fine particles known as PM2.5. These particles are small enough to travel deep into the lungs and may contribute to inflammation throughout the body.
Short-term exposure can cause burning eyes, nasal congestion, coughing, headaches, fatigue, wheezing, chest discomfort, or shortness of breath. People with asthma, lung or heart disease, allergies, or other chronic health concerns may notice symptoms at lower exposure levels.
Children, older adults, outdoor workers, and pregnant people may also be more vulnerable.
Even people without an existing respiratory condition can feel unwell when smoke levels remain elevated for several days.

The Earth Element and Late Summer

In Traditional Chinese Medicine, Late Summer is associated with the Earth Element. Earth represents nourishment, digestion, stability, and the body’s ability to transform food into usable energy.
The digestive system is viewed as the center of the body and the foundation that supports energy, immune health, hormonal balance, and overall resilience. When the Earth Element is well supported, we are more likely to feel energized, mentally clear, satisfied after meals, and emotionally grounded.
When it becomes depleted or overwhelmed, we may experience fatigue after eating, bloating, digestive discomfort, sugar or carbohydrate cravings, brain fog, loose stools, heaviness in the body, difficulty concentrating, worry, or overthinking.
Chinese medicine and modern biomedicine use different language, but both recognize that digestion and metabolism influence nearly every aspect of health.

Delicious Peach Baked Oatmeal (Gluten-Free)

Ingredients:

2 large eggs
3/4 cup lite coconut milk (from a can)
1 tablespoon maple syrup
1 tablespoon coconut oil, softened
1 teaspoon vanilla extract
2 1/2 cups rolled oats (250 grams)
1 1/2 teaspoon cinnamon
1 teaspoon baking powder
1/4 teaspoon salt
2 cups diced peaches (300 grams)

Instructions:

Preheat the oven to 350 degrees Fahrenheit. Grease an 8×8 baking dish with coconut oil and set aside.
Mix ingredients. In a medium-sized mixing bowl, add wet ingredients (milk, eggs, maple syrup, coconut oil, and vanilla) and mix well to combine. Add your dry ingredients (oats, cinnamon, baking powder, and salt) and mix well to combine. Stir in peaches. I like to save a few peaches for sprinkling on top.

Bake. Pour the oatmeal mixture into the greased pan. Bake for 40 minutes until firm and a toothpick comes out clean. Let cool for 5 minutes and slice into 9 equal-sized bars.
Enjoy! Serve as is or with a dollop of Greek yogurt and a drizzle of nut butter.

Summer often brings a different kind of stress. Whether it's the excitement of travel, outdoor activities, longer days, or the more traditional stressors of daily life, your adrenal glands may be working overtime. The adrenal glands play an essential role in regulating the body's stress response by producing key hormones and other chemical messengers that help you adapt to physical and emotional demands.

One of the newest therapies we are introducing in the clinic to support adrenal function -as well as many other conditions- is neural therapy. Neural therapy is an injection-based treatment that uses procaine (a local anesthetic similar to Novocaine from the dentist) to help regulate nervous system function.

Neural therapy can be an effective addition to a comprehensive treatment plan for restoring healthy communication within the body's signaling pathways. The procedure is quick, minimally invasive, and can often be incorporated into an existing office visit. If you're interested in learning whether neural therapy may be right for you, we encourage you to ask us during your next appointment.
