Before I became a mom myself, I used to judge parents who fed their kids processed crap. I don’t do that anymore. Mostly because but also because feeding kids is hard af. I always assumed I’d feed my child Perfectly Paleo or whole food plantbased vegan meals. Don’t get me wrong, I’m not exactly serving up McDonald’s but my food philosophy has changed so much and has become (dare i say it) balanced!! I always offer plenty of fruits and veg, whole grains, legumes, healthy fats, and protein from both animal and plant-based sources. No arbitrary food rules over here when I just want my picky 2 year old to eat something other than a cracker and a granola bar.
•This week I’m trying something different with our groceries. I’m buying a few more frozen and premade items from the grocery store. 😱 🙊 Honestly, I needed a mental break from thinking I need to make everything homemade from scratch with the purest ingredients. Health will always be a priority in our household! But right now im leaning on things to make my life easier and im not mad about it. In fact, im hella grateful that I have access to these options in the grocery store! This isn’t our whole grocery haul- we already had a bunch of fruit, peppers, potatoes, and pantry basics like rice/ beans/ pasta.

I filled this burrito with refried black beans, seasoned rice, fajita peppers, spring mix, vegan chicken, avocado, salsa, and Siete foods dairy free queso. It. Was. Delish.

What lunch is looking like today:

Random tofu noodle bowl recipe//
•Press water out of a block of extra firm tofu and cut into triangles. Dust both sides with garlic powder, chili powder, smoked paprika, nutritional yeast, and S&P. Air fry at 400° for 16 minutes, flipping halfway.

•Cook rice noodles & veg to your liking. I threw frozen broccoli and veg mix in with my noodles to keep it simple.

•For the peanut sauce, add 1 tbsp tamari, 1/4 cup peanut butter, 3 tbsp honey, 1/2 tsp smoked paprika, 1/2 tsp garlic powder, and a splash of water to a jar. Stir together until we’ll combined. This makes a thicker sauce- water down as needed.

•Assemble your bowl with noodles, tofu, veg, and mix peanut sauce throughout. Add some nori sheets on the side to make mini wraps with the ingredients. I also added a side of vegan kimchi Mayo that is just delightful as a dipping sauce for crispy tofu.

Loving these lunch moments. Also obsessing over this breakfast sandwich moment. Pasture raised egg, smashed avo, EBTB seasoning, peppered turkey bacon, lots of Cholula, and sourdough toast 🤤 My toddler is having a deconstructed version of this. What’s your go-to lunch to make at home?

Let me tell you about last night’s veggie-packed dinner…
I cut a nori sheet into fourths and topped them with jasmine rice, air-fried zucchini, marinated tempeh, guac, and sautéed veggies (kale, bell pepper, broccoli). I used my homemade peanut sauce to marinate the tempeh and sauté the veg.
This dinner was perfect, cooked just how I like it: no measurements, no recipe, just following my heart’s desire when it comes to spices and sauces. It was plated just how I like it, too: with waaaaay too much food on my plate😂 But a meal that makes leftovers is a win in my book.

Added some hot sauce and crispy air-fried cauliflower hash browns on the side!

Low carb pizzas 🍕 for a and today! Here’s the rundown:
•Preheat oven to 400° F. Spread desired pizza sauce over a carb balance tortilla. Sprinkle mozzarella. I added banana peppers and spinach to mine. Line a cookie sheet with parchment paper, place the pizzas on top, and shove those suckers in the oven for 6-7 minutes. Once done, top with fresh basil and oregano 🌿
